"Aurora is a 7% ABV West Coast IPA, brewed to celebrate Espiga's eleventh anniversary. Its bright golden color is reminiscent of the sun that gives us life. The nose features an intense and fresh profile of Zappa, Mosaic, Centennial, and Citra hops, with herbal, citrus, and fruity aromas. The palate is light and flavorful, with a clean, balanced bitterness that invites you to keep drinking. "A Berliner Weisse pale yellowish with fine bubbles. In aroma the fruity notes of the peach stand out and generates a very exotic and captivating fragrance. In mouth it combines acidity and freshness, followed by the delicate sweetness of the peach that is balanced with the nuances generated by the wheat flakes and yeast Lactobacillus, essential to obtain the clean character of lactic acid so characteristic in this Berlin style."

"At 4.5% alcohol by volume (ABV), this variety has a medium body with a smooth and silky texture in the mouth. The predominant notes are those of roasted malt, with hints of coffee and chocolate, complemented by a light bitterness from the hops. "Demeter, the Greek goddess of agriculture, accompanied us last September. Previously, she had assured us of growth and abundance by guaranteeing a good harvest of hops, and there we went to pick them. We picked the Chinook variety in the Biolúpulus fields and that same day we put it in the boiler to make this beer. This golden-colored IPA DDH has a hazy appearance. In aroma, we find the earthy, resinous and woody notes that the fresh Chinook brings us, accompanied by notes of white grapes and light notes of tropical fruits such as mango, pineapple or peach. In the mouth, we appreciate all these flavors throughout a silky and smooth sip thanks to the combination of malts and hops that it provides."

"Octopint is a hazy-looking IPA with a double dose of dry hopping of two American hops. The Octopint octopus has traveled the oceans to collect the new Mckenzie hops in Oregon and the Ekuanot hops in the Yakima Valley. The new Mckenzie hops combine very well with the Ekuanot because they complement each other with the notes of tropical fruits they bring. The Ekuanot gives us more citrus and tropical fruit notes such as papaya and pineapple and even pepper and the Mckenzie more resinous notes, melon, grapes and memories of thyme. An ideal combination of fruits is created on a citrus and fresh base due to the notes of herbal plants that they also bring. In the aroma and flavor we will find all these notes accompanied by a silky sensation thanks to the combination of malts with barley. The octopus drinks the pints in 8 in 8, and you?"

"As is tradition for our anniversary, we brew Twilight Hyperactive, a Triple IPA that pays homage to our most emblematic beer: Hyperactive. This year we wanted to capture that magical moment of dusk, when daylight turns into night, and translate it into an intense and silky beer.Twilight Hyperactive is loaded with two hop bombs, Simcoe and Citra, which provide more aromatic intensity and a higher alcoholic strength, while maintaining its juicy and enveloping character."

Blend made of 1,2 & 3 year old lambics (Boon, Girardin and their own brewed lambic they call: "Spierelambic" after the tiny river that runs near the brewery).

"Blend of 1,2,3 years old lambic with Barbera grapes from Piëmonte in Italy. The blend is a collaboration with our friends from La Carlina Winery near Alba. This blend had a second fermentation in the bottle. "

"Blend of 1, 2 and 3 year old lambic with Gorsem cherries from Gingelom aged on a old American Bourbon barrels of 190 liters."

"1 to 4 years old lambic with apricots from Ardeche in France & Spanish wild white peaches.

We blended the fruit lambics together with 2021 harvested riesling grapes from the Mosel in Germany that were barrel aged for 2 years."

"1, 2 & 3 years old lambic. Blended together in 2021 and aged for 28 months on bourbon barrels and ex Canadian bourbon aged maple syrup barrels."

We barrelaged the 2023 elderflower for a year in a burgundy barrel.

This is a mix of 7 different handpicked varieties of elderflower."

How did the beer get its name? After sorting out for days at the ideal ripeness of the mirabelles in 2020. Let's just say it took a while before I fell in love with the mirabelles."

In 2022 we tasted a small beautiful plum from Spain, the parfume and taste was heaven on earth.

In 2024 we had the opportunity to have a small amount of plums again. This year we blended the plums with a small amount of black muscat lambic that aged one year on a Bordeaux barrel."

"In late spring 2022, we received a batch of 2-year-old Danish Shipyard Ale from passionate port lover Ehren Schmidt. We carefully blended it with 1-year-old lambic and a touch of very young lambic. After an additional 2 years of aging in Bordeaux barrels, we finalized it with a 50/50 ratio of lambic and Danish Shipyard Ale."

"A blend of 1, 2, 3, and 4 year-old lambic, aged for three years in Vino de Naranja barrels from Andalusia, Spain. After barrel aging, a small amount of lambic matured on Tarocco blood orange was added."

Season 2019-2020. Assemblage #15 bottled on 07/01/2020. "This specific Oude Geuze Cuvée Armand & Gaston is a blend of lambikken from seven different barrels and foeders, and six different brews. This blend is a 63-23-14 cut of one-, two-, and three-year-old lambics, respectively. The oldest lambik was brewed in 2016. We aged this bottle for over five years in our own cellars. This brings the weighted average age of this bottle to approximately 90 months at the time of its release."

Season 2021-2022. Assemblage #105 bottled on 18/08/2022. "For this blend of Oude Geuze Cuvée Armand & Gaston, we blended lambikken from four different barrels and ten different brews. As we used about 20% of four-year old lambik and a lot of two-year old lambikken, the weighted average age of this blend upon bottling was 24 months. Add to that another three
years of cellaring which brings the weighted age of this bottle to 50 months upon its release. More than 80% of the cereals used in the brews for this blend, were sourced from our own Pajottenland Cereal Collective. While blending, we added some honey from our own bee hives in our Schaarbeekse cherry field."

"Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers, brewed for Christmas. It has a very potent beer (12% alc/vol). It has been boiling for many hours, brewed with pale malt with white candy sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age."
