    "Our most extravagant beer meets the most extravagant breakfast in this year's Caribbean Chocolate Cake twist. We've adjusted the base here a little to allow the pancake element to come through. We're layering maple notes from syrup to wood, maximising depth of flavour. A small amount of smoked malt, working in tandem with bourbon maple staves and the sweet, sticky undertone adds a delicate aroma akin to the impact you'd get from perfectly prepared streaky bacon. A generous helping of cacao and a dusting of spices, in part from the expressive Amburana wood, completes this liquid guilty pleasure." Canned in Nov 2020 best before 10/11/2021.

    Season 2021-2022. Assemblage #42. Bottled on 23/02/2022. "For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective."

    Season 2021-2022, Assemblage #21. Bottled on 21/01/2022. "For this Pruim, we macerated fresh picked-to-ripeness sweet Mirabelle plums. Maceration took a tad over four months. For both maceration and blending, we used over 90% of old lambics, both two-, three- and four-year old. The weighted average of this blend upon bottling is therefore almost 25 months. The final fruit intensity is 304 grams of plums per litre of finished Pruim. The largest part of the fourteen brews used comes from smaller barrels and are 3 Fonteinen-brewed. Of those, more than 1/3 were brewed with Pajottenland grown cereals."

  • De la Senne Crianza

    "Crianza belongs to the family of Flemish Red-Brown ales. Born out of a mixed fermentation, she spent more than a year in oak barrels. Her body has copper reflections, and her aspect is limpid. Her foam is beige and creamy, with a nice hold. She smells like Northern cherries, with a woody and winey accent, and a slightly animal touch given by the Brettanomyces yeast. In the mouth, these flavors are completed by stewed apples, notes of Agen plums, blackberries, spices (cinnamon, cloves, licorice), and a very lightly caramelized touch of malt and biscuit. Her slightly sour character makes her surprisingly refreshing."

  • Siren Caribbean Salted...

    "One of two wildcards this year is a very special Salted Cherry edition, you could say this is a coming together of a Caribbean Chocolate Cake and a Black Forest Gateau. With slightly less cacao than the original, the beer opens up to allow the cherry to come through. We’re using a blend of Montmorency, Morello and Balaton cherries which add acidity and tartness along with the delicious compote vibe, with everything then lifted again by Pink Himalayan Sea Salt. The combination of ingredients is playful on the palate, with each element taking turns to lure you into thinking it’s the star of the show. We love how salt changes the expression of the chocolate, while also changing the mouthfeel of the beer in a great way."
