Season 2018-2019 Assemblage #76. bottled on 23/05/19. Blend made from 5 different barrels (including an Amontillado Sherry barrel) originating from 7 different brews. The Oude Lambic comes from 2 different barrels and two different brews and represents around 40% of the blend. The oldest lambic was brewed on 12th January 2016. The average age of the lambis at bottling is 19 months.

As a special one-off, we've taken it a step further here, spinning the beer on sour cherries, cacao nibs and our very own bourbon barrel aged coffee, developed in collaboration with Quarter Horse."
"Our most extravagant beer meets the most extravagant breakfast in this year's Caribbean Chocolate Cake twist. We've adjusted the base here a little to allow the pancake element to come through. We're layering maple notes from syrup to wood, maximising depth of flavour. A small amount of smoked malt, working in tandem with bourbon maple staves and the sweet, sticky undertone adds a delicate aroma akin to the impact you'd get from perfectly prepared streaky bacon. A generous helping of cacao and a dusting of spices, in part from the expressive Amburana wood, completes this liquid guilty pleasure. "

Kveik yeast is fantastic for IPA due to the tropical flavors it produces during fermentation, Pineapple, mango and tangerine notes from the yeast coupled together with the hops used in this IPA will elevate and intensify the aromas of the hops."
