"After receiving some freshly emptied bourbon barrels direct from Balcones Distillery in Texas we were itching to brew something big, dark and ridiculous. The obvious answer was to give our friend Henok from Omnipollo a ring and ask if he fancied helping us conjure something up. After almost 2 years of aging we decided it was time to take out the beer and lightly enhance it with coconut, hazelnut and vanilla so as to not get too much in the way of the barrel character."

"US style NEIPA 7%. Golden Promise base with oats. Dry hopped with Citra, Mosaic, Ekuanot and YCH 301 Cryo Mosaic. Straw coloured, unfiltered, creamy body with a low bitterness. And naturally, when it comes to our somewhat arbitrary bird logic, the bigger the bird, the bigger the dry-hop, and at 20 grams a litre the tropical fruit aroma is truly pungent."

"Super pale Heidelberg pilsner base with just shy of 40% torrefied wheat, torrefied oats and malted oats to create that super fluffy muffin-like mouthfeel. Hopped with Citra in the whirlpool, dry hopped with even more Citra, Citra Cryo, Nelson Sauvin and YCH 701 HyperBoost Mosaic."

"After a year hiatus in 2024, Cod is back! Our (usually) annual collab with Crosby Hops always begins with the same base beer, and Crosby chooses their favorite varieties of the most recent harvest year to hop it up! This year they’ve chosen their Idaho 7 as well as Estate Grown Comet and Elani, two hops we’re excited to be working with for the first time. Elani gave us some wild fruit notes, a little pineapple, guava, lime, white peach, and orange zest. And Oregon’s unique terroir provided new wave aromas of melon and cantaloupe coupled with more classic notes of sweet citrus and a floral bouquet. A little bit of sticky pine and earthy black tea from the Idaho 7 rounds it all out."

"Since traveling to the west coast that gave this style its name, we’ve been dreaming of the new version of American west coast IPA we came to love there: light, crisp and dry as always, still decidedly bitter, but also juicy and crushable. We took inspiration from our friends at Green Cheek and Highland Park to create our own. Adding corn and rice to give it a bright, light base and using the water profile of a New England IPA for a soft mouthfeel balanced by aggressive hopping for a snappy bitter bite. A blend of old school C-hops for some classic citrus and pine aromas with some new school favorites to add some juicy fruit to the bouquet."
