Vintage hand crafted apple sparkling wine from fresh farm pressed traditional Estonian juice apples. Wild yeast used for primary fermentation. Bottle fermented for at least six months according to traditional method.

Strong Amber beer aged for several years in oak barrels.

"Prato Alto is our most complex wine. It features extended maceration and an horizon of long term. Grapes: GARGANEGA, INCROCIO MANZONI, BRONNER. Grown on calcareous soils: sand, clay and silt. Spontaneous fermentation in acacia wood vessels of 1400 liters , without sulphur addition. Maceration on the skins for 7 days, with delicate fulling."

The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age."

Imperial Stout Aged for 14 months in a PX barrel.

"Ambrosia is one of Boerenerf's unconventional blends: a mead 'diluted' with 10% lambic and macerated with the famous Schaarbeek sour cherries. The deep ruby-red liquid, without a head, has a slight purple tint and looks very much like a full-bodied red wine. The aroma consists of aged dark honey, concentrated sweet cherry juice, a hint of wood from the cherry pits, and subtle lambic notes. When warmed, a faint 'sweaty' smell emerges. There are also hints of pomegranate, cuberdons, wine gums, honey caramel, and a touch of fresh varnish."
