€31.55: 3"Rosato is a blend of wild ales, aged in barrels for 1 to 3 years, and macerated for nearly a year on organic cherries. This long maceration allows the cherries to fully impart their vibrant character, resulting in a beer that showcases the harmony between the fruit and our wild ales. Rosato opens with the aroma’s of strawberries, cherries, rose blossoms and marzipan, complemented by subtle funk and a touch of minerality. On the palate, it offers concentrated flavors of dark cherries, fresh strawberries, tannic blackberries, with hints of cinnamon an some vanilla from the oak barrels."

Holy Goat Crimson Curse
€9.21: 4"This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples."

€43.95Season 2023-2024 Assemblage #75. Bottled on 15/10/2024. "For this Akevitt Lambik, we blended traditional lambikken that have aged on three aquavit barrels. These barrels have held PX sherry for over fifty years and aquavitfor over ten years. These barrels were sourced with Atlungstad, the oldest Norwegian distillery still in activity. The barrels were filled with two-year-old 3 Fonteinen lambik for over 13 months. The weighted average age of the lambik blend at bottling is over 33 months. All brewing cereals used were sourced with farmers from Pajottenland. 100% 3 Fonteinen.
