Mills Bière de Garde (First...
€23.96: 1"Bière de Garde is a blend of three barrels from three contrasting brews produced in January, July and October 2018. The blend produced an easy drinking, dry, malt-forward beer with balancing bitterness and funk. The bottle fermentation included a phase led by lactic acid bacteria, known as 'sickness', which produces extra weight and fullness to the mouthfeel. Bottled in November 2019, the beer was effectively lagered in bottle at cold ambient temperatures over winter, before completing maturation in the early summer months of 2020."

Mills Clomp
€21.97: 2"The second edition of our dry-hopped red beer, Clomp. This blend was made from two brews produced in May 2019 and June 2020. Fermentation took place in red Bordeaux barrels for three and two years respectively. The rich red beer benefitted from a fairly long time in barrel to build the acidity and tannin required to balance the sweetness of the malts. To enhance the bright fruit aromatics present in the base beer, the finished blend was dry-hopped with whole-leaf US grown Chinook, from the latest harvest. The finished beer conditioned in bottle for a (relatively) brief four months before release, to allow enjoyment of the fresh the hop aromatics. As with all our dry-hopped beers, these aromatics will evolve quite dramatically over time."

Mills Glass
€20.98"Glass is our series of beers characterised by a delicate minerally flavour, fresh kettle-hop aroma, and the addition of sea salt in the blending tank. This is our third iteration. In February, April and August 2020 we produced extra pale, minerally worts, with fresh East Kent Goldings hops. The fresh hops add wonderful aromatics (quite distinct from dry hop character) as well as acting to restrain the acidity produced in the wild fermentation. We made a blend from the four most delicate tasting barrels and added a touch of Cornish sea salt into the blending tank to give a crisp finish."

Mills Spectre Sister
€24.92Blend Five. "Spectre Sister is a blend of two extra pale beers produced in July and August 2020. The worts were made with maize, wheat, oats and rice. They fermented in a mixture of old bourbon barrels and freshly emptied cider barrels (from Oliver's Cider and Perry, and Ross-on-Wye Cider and Perry Company). Conditioning in bottle took place through winter and spring producing an effervescent, bright and delicate saison."

Mills Twig
€23.61: 3"English hopped beer made from a blend of solely three year old brews, produced in January and April 2020. The beers were made from turbid mashes using pilsner, wheat and rye malts. The resulting wort was boiled with aged hops, before spontaneous fermentation in old white Burgundy barrels. The blend focused on building a perfect base for an addition of wonderfully complex, but relatively subtle English-grown hops. We aimed for a balance of spicy and fruity aromatics, with nothing too characterful to obscure the incoming dry-hop, underpinned by a moderate acidity with just enough volatile acid to give it some life. The blend was dry-hopped with undried "Low Carbon" hops from Brook House Farm, up the road in Herefordshire."

Mills Underdone
€23.61"We used a grist containing 100% floor-malted Maris Otter, to try and capture the rich malty aromatics found when opening a bag from the maltings. In May 2021 we drew a wort from a six hour mash stand. The wort was not heated or boiled, and whole leaf Zappa and Bramling Cross hops were left to steep, before primary fermentation in our coolship, initiated by krausening with actively fermenting spontaneous beer.The resulting raw ale continued fermentation in one Herefordshire cider and one Scotch whisky barrel for twenty three months before blending and bottling. As with all our beers, it was bottled completely flat, with a good dose of primings to produce lively carbonation via refermentation in bottle."

Mills Amber Lees
€23.61"Amber Lees was brewed to have a fairly rich and sweet malty body, balanced by firm bittering and relatively high acidity. This second blend has a touch more poise, along with a little more aromatic interest courtesy of the trans-atlantic dry hopping. This was made from a blend of 2 worts produced in May and August 2021. Half the blend fermented in two freshly emptied, unrinsed cider barrels. The other half in two California white wine barrels. The resulting beer was dry-hopped with whole-leaf Mosaic and Goldings, before priming with dark muscavado sugar for bottle conditioning. After a short 2 months in bottle the aroma is currently one of the most fruit-forward we have produced, with blueberry, strawberry, orange, and ginger in abundance."

Mills Resin
€24.92"What happens when you put 100 bitterness units (akin to a bracing west coast double IPA) into a traditional turbid mash wort? We have always taken inspiration from the wide ranging flavours our neighbouring west-country cider makers are afforded by the huge array of cider apples grown locally. We aim to brew an equally wide range of worts, to give us an equivalent array of flavours from which to blend finished beers. After a night in the coolship, the wort was run into three small oak barrels, where it was left to ferment for 16 months. During fermentation, the bitter hop compounds restricted growth of lactic acid producing bacteria."

Mills Saison Cider Cask
€24.92"Our fourth edition of Saison Cider Cask is a blend of four barrels produced in November 2020 and June 2022. The contrasting brews used a variety of grains and a mixture of aged and fresh European hops. Fermentation took place in fresh cider barrels from Oliver's Cider and Perry, as well as Ross-on-Wye Cider and Perry Company. The finished blend was dry-hopped with whole-leaf Kazbek and Brewers Gold before conditionning in bottle."

Mills Aceh
€23.98"Our second time releasing a coffee beer after our first foray in 2024's Angucho. Aceh is a single barrel bottling of golden beer, brewed in November 2022. The wort was made using a turbid mash, including an inadvisable quantity of caramelised barley malt and aged hops. We initially set about selecting a coffee that we thought would best marry with our beer, before delving into the barrels to find its partner. After extensive tasting round the cellar, a barrel was selected to complement the addition of an Indonesian coffee from the Aceh region of north Sumatra, made using an anaerobic honey fermentation process"

Mills / Oliver's Nachmelena...
€23.98"Tom Oliver makes cider and perry in small batches, using fresh pressed cider apples and perry pears, spontaneously fermented by wild yeasts. Nachmelená Hruška was made by co-fermenting an equal proportion of Herefordshire perry pear juice (2019 harvest), with wort made in the style of a Czech svetlý ležák (light lager), using Czech grown barley and Saaz hops. The resulting beer conditioned in bottle for 7 months before release. Named by Tom's Czech right-hand man Jarek, "Nachmelená Hruška" translates as "hopped- or drunk- pear.""

Mills Old Grisette
€23.98"Made from a blend of six year old NZ hopped saison with a four year old golden beer made with aged hops and caramelised wheat. This breaks our record for the oldest barrel of beer we have included in a blend. The slow spontaneous fermentations took place in an old white Burgundy barrique and a fresh Herefordshire cider barrel. The two barrels were quite distinct from each other. One remarkably fresh and zesty, with plenty of hop bite. The other bringing juicy acidity and complex earthy aromatics. Together they strike a delightful balance on the palate and an inviting excuse to bring in some new season hops to add some punch to the aromatics. The blend was dry hopped with whole leaf US grown Cashmere from the 2025 harvest ."

Mills Running Beer
€9.54"About eleven years ago we visited Boon in Belgium and were delighted to find their geuze in tiny 25 cl beer bottles in the brewery shop. It seemed outrageous to have such a beer in such openable bottles. Needless to say, the remainder of the trip was peppered with tiny geuze portions at every opportunity. Breakfast geuze?
Last year we filled a blend of Running Beer into 375 ml half Champagne bottles for the first time, with the aim of having a more portion size option of our house beer. We've come to the conclusion that we only did half the job though, and are delighted to present Running Beer in our lovely 330 ml beer bottles, slowly conditioned in bottle just like the 750s (which we will continue to release Running Beer in too).
Running Beer is the first beer we designed for Mills Brewing. It is the purest distillation of how we make beer. This is blend sixteen. The average age of the beer at bottling was 25 months.
We aim towards a similar flavour profile for Running Beer each time, however we still have no set recipe. The grains and hops are varied for each brew. A variety of worts are produced using traditional turbid mash methods and aged hops, before spontaneous fermentation in different types of barrel. We welcome the natural variation given by the wild fermentation. At the point of blending, our aim is to make the body relatively full for the ABV. This is aided by the inclusion of large quantities of rye grains in most of the brews we use in Running Beer" -
Mills Saison Hallertau
€7.55"Saison Hallertau is a blend of four barrels from three worts brewed in January, March, and August 2019. It was dry-hopped with whole leaf Hallertau Blanc, Mandarina Bavaria, and Fuggles.The beer is a bitter, amber saison with a good balance of malt, yeast, and hop flavour. A small quantity was released relatively fresh last year through Favourite Beers, as a tribute to Nicky Norwood, wife of owner Leigh. The further ageing since has allowed time for the wild yeast to significantly modify the hop aromatics and add further depths of funk."

Mills Still
€7.55"Still is a single barrel bottling of four year old beer, brewed in March 2018. We have been hoping to find a barrel that would have enough character and bite to exist without the need for carbonation. The wort was made using a turbid mash and underwent an extended boil with large quantities of aged hops. After two nights in our coolship, the wort was transferred to a single 500 litre barrel for four years of fermentation and maturation. The resulting beer was bottled still, without the addition of sugar to produce a refermentation. It has a significant richness for the abv, balanced by a striking hop bitterness, and lingering tannin from the four years in oak."

Mills The Dickens
€9.14: 3"The Dickens is our take on one of Jonny's favourites, the Belgian Golden Strong. An effervescent, heady, pale, dry, and lightly bitter beer that remains delicate and balanced despite its considerable strength. A clear wort was drawn from an infusion mash of pilsner malt and spelt. Large quantities of European hops and cane sugar were added during the boil. Fermentation took place in our open coolship at warm ambient summer temperatures. The young beer maturated in large oak casks with wild yeast and bacteria until the winter. Finally, the beer is dry-hopped with whole-leaf hops and bottle conditioned for three months before release."

Mills Tiny Islay
€22.60"Bottled Dec 2025 - A session strength version of Islay Brut, our peat-smoke Champagne beer. Referred to in-house as "the beer no-one was asking for." Tiny Islay is a single barrel release, brewed in March 2023. The worts was produced from a traditional turbid mash with a decent quantity of maize, giving a more delicate flavour and paler colour than malted barley. It underwent spontaneous fermentation in a small Islay whisky barrel, imparting aromas of maritime peat smoke. Upon tasting the barrel, we were delighted to find the beer possessed just the right balance of dry-bitter and sweet-acid, as well as the necessary body to carry the smoke, without the need for the ABV-boosting sugar additions we have previously utilised to strike the right balance with these smokey beers. Finally, the beer was conditioned in-bottle for four months. A large dose of priming sugar was added to produce a rolling, Champagne-type, carbonation. The resulting beer drinks remarkably easily, with delightful sweet, smoky, and spicy aromatics."

Mills High Cut
€23.61: 3"This is a new blend, created to capture the remarkably light and fresh citrusy character we find in some of our older barrels. It was made from a blend of pale beers, consisting of 2 barrels of 4 year old beer, and 2 barrels of 3 year old beer. The barrels making up the blend were selected for their combination of bright citrus acidity and balancing deep funk, to produce a complex yet elegant summery beer. The finished blend was dry-hopped with fresh whole-leaf Czech Saaz hops, for their wonderful noble aromatics, along with a touch of US Citra to highten the lemon/grapefruit notes of the fermentation. Bottled straight from the dry-hop tank to capture as much of the hop as possible, the finished beer then conditioned in bottle for 5 months."
