    Season 2020-2021 Assemblage #27. Bottled on 11/02/2021. "For this, Druif, we co-fermented Belgian Dornfelder with one- and two-year old lambik in a 53/47 cut. We used the freshly pressed and shortly skin-macerated juice and put the unfermented juice with young lambik for continued fermentation in stainless steel. Afterwards, we blended with two-year old lambik. All lambikken originate from seven different barrels and seven different brews. The final fruit intensity is 31.6%."

"For this classic version of the Zenne Y Frontera Blend 55, we blended all of our Josefa Perez Barrels. this tiny bodega in the heart of Jerez de la Frontera inspired a lot of the other independent and family owned bodegas through their high quality and steadfast vision. this blend consists of lambik aged on four oloroso barrels and two amontillado barrels.we matured three-and-a-half-year and older lambik for anothereleven months on these sherry barrels. consequently the weighted average age of this blend is over 50 months."

    Season 2023-2024 Assemblage #61. Bottled on 05/12/2023. "For this ‘Cha-Cha-Cha’ geuze, we blended three Savagnin barrels ‘sous voile’ from Jura, and one Vin Jaune barrel. The three Savagnin barrels held this respective wine for four years, not enough to become a true Vin Jaune. These barrels come from LuLu Vigneron. The Vin Jaune barrel was sourced with Philippe Chatillon. We aged 18 month old lambik for another year on the Cha-Cha white wine barrels. For the Vin Jaune barrel, we aged three-year-old lambik for an additional year on this barrel. The weighted average age of this blend is more than 35 months. 100% 3 Fonteinen." Bottle Count 1100.

    Season 2023-2024 Assemblage #38. Bottled on 09/04/2024. Bottle Count 1041. "For this Druif, we macerated and matured organic Chenin grapes on an oak barrel for more than eight months. The grapes were harvested at Domaine Des Hauts Baigneux. More than 60% of this grape lambik blend contains lambics that are more than four years old. The weighted average age of this Druif is more than 28 months. The final fruit intensity is 364 grams of grapes per litre of Druif. 100% 3 Fonteinen.
    A few years ago, we started working with the most progressive low-intervention winemakers around Europe. Domaine des Hauts Baigneux is a small and renowned organic wine maker from Azay-le-Rideau, in between the cities of Chinon and Tours, in the Loire region, France. Thank you to Nicolas and Philippe for this wonderful collaboration."
