    Season 2020-2021, Assemblage #6. Bottled on 05/01/21."This Aardbei has shortly macerated on a stainless steel tank and then matured on a foeder for another two months. We used strawberries from Ferme Framboos that were hand-picked in the summer of 2020.
    We used a single jonge lambik, and we did not blend with any other lambik afterwards. The final fruit intensity amounts up to 623 grams of strawberries per litre of Aardbei."

    Season 2020-2021, Assemblage #21. Bottled on 26/01/21."For this Braam, we sourced hand-picked blackberries from Ferme Framboos in Huldenberg, Vlaams-Brabant, Belgium.
    We macerated these for three months in a 50/50 cut with lambikken from five different barrels and five different brews. Before bottling, we added lambikken from another barrel and two different brews. The majority of the lambikken that we used are 3 Fonteinen brewed, and one quarter of those are from our own Brabant farmers’ collective. The final fruit intensity is 384 grams of blackberries per litre of Braam."

    Season 19/20 Assemblage #30. Bottled on 22/01/20. "For this Druif, we used Dornfelder grapes from Wijndomein Hoenshof in Hoepertingen, Haspengouw region, Flanders. Dornfelder is a dark-skinned variety, originally from Germany. We co-fermented lambic with freshly-pressed-shortly-skin-macerated Dornfelder grape juice in an oak foeder. We let it sit for four months and blended the grape lambic with some fresh lambic wort for the “prise de mousse” in the bottle. The final fruit intensity is 51,7% of grape juice per litre of Druif Dornfelder. 100% 3 fonteinen."

    Season 19/20 Assemblage #47. Bottled on 25/02/20. "For this Druif, we used Muscat Bleu grapes from Wijndomein Hoenshof in Hoepertingen, Haspengouw region, Flanders. Muscat Bleu is a hybrid wine and table grape and has its origins in Switzerland. We macerated the grape must with four different lambics from two different barrels. We let it macerate for five months and blended the grape lambic with another three young lambics prior to bottling. The final fruit intensity is 38.1% of grape must per litre of Druif Muscat Bleu. 100% 3 fonteinen."

    Season 18/19 Assemblage n°103 bottled on 22/08/19. For this specific Framboos, summer raspberries were used. Maceration was short to nicely fuse the fruitiness, fruit acids and soft lambics. The used lambics come from 3 different barrels and 5 different brews, two from Lindemans (80%) and three from 3F (20%).

The lambics used come from three barrels and six different brews. We used a bit of our own lambik wort to start the fermentation in the bottle."

    Season 19/20 Assemblage n°7 bottled on 15/11/19. "For this framboos we used hand-picked raspberries from Lembeek. We macerated them on an oak barrel and on one lambic for more than three months. Then we assembled with another 3 Fonteinen-lambik. The fruit intensity is 378 grams of raspberries per liter of Framboos."

"For this Frambozenlambik, we macerated raspberries from Ferme Framboos for four months on jonge lambik at a fruit intensity of 382 grams of raspberries per litre of lambik. Lighter in colour due to the applied maceration technique, the raspberry characteristics in aroma and taste of this Frambozenlambik present themselves while opening up. We let this Frambozenlambik rest for almost 18 months before releasing it. 100% 3 Fonteinen."

Bottled on 01/07/20."For this Hommage, we blended a kriekenlambik and a frambozenlambik in a forty-sixty proportion and with a final fruit intensity of 529 grams of fruit per litre of Hommage. The weighted average maceration time was five months, and we used both jonge and two-year old lambik from seven barrels and eleven brews. This bottle was left for a year in our warm room before its release."

    Season 19/20 Assemblage #10. Bottled on 11/12/19. "For this Hommage, we blended a co-maceration of raspberries and sour cherries – but we switched the fruit proportions – with a small batch of pure frambozenlambik. Consequently, this Hommage is somewhat out of the ordinary. The average weighted maceration time is 5,5 months and the final fruit intensity is 493 grams of whole fruits per litre of Hommage. The proportion of sour cherries is 54% vs. 46% of raspberries; the latter all sourced at Ferme Framboos. Finally, we also used a sizeable portion of two-year old lambik, brewed in the beginning of 2018. All lambikken originate from four different barrels and six different brews."     Assemblage #4 bottled on 18/11/19. "This Cuvée Armand & Gaston was blended with lambik from 8 different barrels and no less than 10 different brews. Some of our own harvested summer 2019 honey was added to this blend. The oldest lambik was brewed at the end of 2016. One of the lambikken was brewed with fresh Coigneau hops, a local “lambik” variety. This blend has aged for over a year at the time of this release."
