"Beer of spontaneous fermentation, the GUEUZE DU TILLEUL À L'ANCIENNE - BIO (7%, 75cl & 37,5cl) is entirely made from a blend of our own 1, 2, and 3-year-old lambics brewed from organically grown malted barley (60 %) and wheat (40 %), and overaged hops. Unfiltered and unpasteurized, this beer was refermented and matured in the bottle for more than one year.

This blend is made up of 50% one-year-old lambics, 25% 2-year-old lambics and 25% 3-year-old lambics.

The first bottling took place on Tuesday, March 25, 2025. 5300 75cl bottles were produced. A second bottling took place on Tuesday, April 1, 2025. 10600 37,5cl bottles were produced. "

"A blend of several open-fermentation barrels aged for 4 and 2 years without topping up. We then macerated Chenin Blanc grape pomace for a week."

"Fellowship 2025 Ale No 1

Elanor is a fruit sour ale of 7% alc. vol., a union of sun and bright acidity, oak-aged and richly macerated with 100% Schaerbeek cherries. Each cherry was hand-picked in two hidden places near Brakel, where the trees still whisper in the morning mist and the fruit glows like rubies among the leaves."

"A lambic blend containing 1, 2 and 3 year old lambic from 4 different breweries. During our holiday last year in the south of France, we took home some of the best apricots and peaches we ever came across. After macerating them on the different lambics, we aged the beer for a couple more months. A few days prior to botteling we added fenugreek herb to it. This herb imparts a specific herbal and curry-like character. Interestingly, fenugreek powder can be used to fight mildew in the vineyard."

"Ale Aged in Oak Barrels with cherries. In this blend of Funky Blender we added fresh, whole fruit at rate of about two pounds per gallon to our base beer. Each barrel is carefully hand picked to ensure it will pair perfectly with the whole fruit we are using while keeping the funky flavor. The unique lemon and lime aromas that come from the base barrels of Funky Blender harmonize with the whole fruit added."

"Flavor King pluots, what else needs to be said? This variety is literally the King of Flavors! The blend delights from the start of the pour. Pink foam that not only drops off the kids for the birthday, but then sticks around for the flavor party. What? Does anyone read these? Classic Colorado plum aromas in the nose just remind me why I love plums so much, I hope we can get more this year. Low/medium acidity and rich body that makes one think it's actually sweet.
