"Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime."

Season 2023-2024 Assemblage #54. Bottled on 18/06/2024. "For this classic version of the Zenne Y Frontera Blend 54, we blended not less than fice different barrels of sherry aged lambik. The barrels are a mix of very old Oloroso and Amontillado barrels from two small family bodegas. Bodega Joséfa Perez is located in the hearth of Jerez de la Frontera and Gutiérrez Colosia is locted at El Puerto De Santa Maria. We aged more-than-three-year-old lambikken for an additional year on these sherry casks. consequently, the weighted average age of this blend is over 50 months."

Season 2023-2024 Assemblage #55. Bottled on 18/06/2024. "For this classic version of the Zenne Y Frontera Blend 55, we blended all of our Josefa Perez Barrels. this tiny bodega in the heart of Jerez de la Frontera inspired a lot of the other independent and family owned bodegas through their high quality and steadfast vision. this blend consists of lambik aged on four oloroso barrels and two amontillado barrels.we matured three-and-a-half-year and older lambik for anothereleven months on these sherry barrels. consequently the weighted average age of this blend is over 50 months."

Season 2022-2023 Assemblage #58. Bottled on 23/03/2023. "For this Oude Geuze, we blended not less than four barrels with lambikken originating from ten different brews. The featured lambikken were young, two, three and more than five years old. This brings the weighted average age of the blend to more than 32 months on the moment of bottling, and more than 56 month on the moment of the release. Of the 3 Fonteinen brewed lambikken - making up more than 60% of the blend, more than 60% of these were brewed with local barley and wheat, all coming form organic farmers in Pajottenland."

100% Pinot Noir. "The grapes were harvested north of the Yonne from thirty-year-old vines. Fermented using its own indigenous yeasts and without any additives, this wine underwent a short maceration before pressing, followed by a year of aging in stainless steel vats. No added sulfites. Batch-PN23"

Blend of several open fermentation barrels aged for 4 and 3 years without topping up. The brewery team then left the Pineau d'Aunis pommace to macerate for a week.

Fellowship 2024 Ale No 2. "In the twilight halls beneath the Mountain, a rare elixir was wrought. A blend, forged not in haste but with the patience of ages. From the deep vaults of time comes Souterain, aged three full years in barrels of ancient Madeira- rich with the memory of distant coasts and sunlit groves. And beside it, a noble companion: Cuvée Theo, tempered for twenty months in vessels that once held the fire-hearted spirit of Aquavit. Now, the two are joined - a union of earth and spice, of depth and brightness. This is no common ale, but a draught for those who seek legend in their cup."

Fellowship 2024 Ale No 1. "Narya is a spontaneous fermented beer, where wort was added to Divico grapes from Winery Hoenshof in Belgium. After 7 months of maceration and fermentation, Narya was barrel aged on Chateau Siran Margaux barrels for another 6 months."

Fellowship 2024 Ale No 6. There lies, tucked in the heart of the Shire, a place where tales grow tall and mugs are never empty - The Green Dragon Inn. It is a name spoken with warmth, laughter, and the clink of well-worn tankards. Born of mixed fermentation and aged with the patience of old innkeepers, Phi was laid to rest in barrels of Wild Turkey Bourbon and Tawny Port, where time wove its magic. The sourness sings like a fiddler at dusk, lively and bright, while the barrel's kiss adds depth, warmth, and echoes of distant lands. Thus, the beer took on a name worthy of song: The Green Dragon Inn - a drink to rouse the heart, loosen the tongue, and remind all who sip it of home, hearth, and the road that ever goes on."

Fellowship 2024 Ale No 3. "In the cellars where silence reigns and the stone walls remember songs long forgotten, a noble brew was laid to rest. Theo, as it was once called, found slumber in a barrel of Margaux red wine-oak steeped in the blood of vineyards from lands far beyond the sea. For two years it dreamt beneath the earth, drawing wisdom from the wood, strength from the wine, and spirit from the stillness. When it awoke, it was no longer Theo. It had become Theodén - a kingly name, bold and grave, bearing the weight of time and the richness of its lineage. A beer for those who would drink with honor, and remember."

Fellowship 2024 Ale No 4. "Far across the sundering seas, in the West beyond the reach of mortal sails, lies Tol Eressëa - the Lonely Isle, shrouded in song and mist. It is from this legend that a brew takes its name. For three long years, it slumbered in barrels that once cradled the deep, fortified wines of Madeira - an island whispered of in old tongues, distant yet resonant with warmth and wonder. The wood, kissed by salt and sun, gave freely of its memory. Thus was born Tol Eressëa, a beer touched by the echo of elven shores - gentle, deep, and radiant with the light of the West. Not merely a drink, but a remembrance of things unseen and far away."

Season 2023-2024 Assemblage #30. Bottled on 16/02/2024. "For this organic Druif, we blended three different grape lambikken, based on three typical grapes of the Languedoc: Carignan (20%), Grenache Noir (40%) and Syrah (40%). All grapes were picked at Domaine La Baronne. André and Suzette Lignères aim is to create intense yet balanced wines, safeguarding the biodiversity in their vineyards through low yields and biodynamic treatment of their vines. We applied a cold maceration on both the Carignan and Grenache grapes before continuing maceration on young lambik for a period of more than five months. All macerations happened on oak barrels. We blended with three-year old lambik, clocking the weighted average age of this grape lambik to more than 23 months. The final fruit proportion of the blend is 352 grams of grapes per litre of Druif. All grains of the 16 brews were sourced within our cereal collective and are all organic. 100% 3 Fonteinen."

Season 2023-2024 Assemblage #37. Bottled on 09/04/2024. Bottle Count 1824. "For this Druif, we macerated organic Roussanne grapes from Domaine La Baronne. This winery is situated in Corbières in Languedoc, in between Carcassonne and Narbonne. André and Suzette Lignères aim is to create intense yet balanced wines, safeguarding the biodiversity in their vineyards through low yields and biodynamic treatment of their vines. We macerated the full Roussanne grapes for more than eight months in an oak barrel. We then blended with some more four-year old lambik. The four-year old proportion makes up more than 60% of this fine grape lambik blend. The weighted average age upon bottling is therefore more than 31 months. The final fruit proportion is 307 grams of grapes per litre of Druif. 100% 3 Fonteinen."
