€38.71Season 2021-2022, Assemblage #92. Bottled on 20/07/2022."For this small batch of Aardbei, we macerated locally grown and hand-picked strawberries on jonge lambik. Afterwards, we blended with three-year old lambik. The weighted average age of this strawberry lambik clocks at more than nineteen months on the moment of bottling. The fruit proportion is 350 grams of strawberries per litre of finished Aardbei. Half of the cereals that we used while brewing, originate from our Cereal Collective. Bottle count: 392."

The base beer is a blend of one, two and three-year-old Danish Wild Ales aged in white wine barrels. We racked this onto freshly destoned and crushed white Saturn peaches at a rate of over 600 grams of peaches per liter, and left it to macerate with the fruit for over a month before bottling. Mills Today XO
€24.92"Today XO is a a blend of solely three year and older barrels. This is its third iteration. This beer is made from three brews, fermented in three different barrels. The worts were made in January, February and April 2020 using traditional turbid mash methods. They were subsequently left in our coolship overnight to be inoculated with wild yeast and bacteria, before being fermented in oak. The resulting beer underwent extended bottle maturation before release."

The weighted average maceration time was nine months. We used a lot of four- and five-year old lambikken for the maceration. The weighted average age of this fruit blend upon bottling is more than 44 months. The final fruit intensity is 359 grams of fruit per litre of finished fruit lambik."

€29.11: 1Season 2023-2024, Assemblage #2. Bottled on 21/11/2023. "For this Perzik, we macerated peaches from Ludo Rosseels from Gelrode, Vlaams-Brabant, Belgium. Maceration time was four months. For the maceration and the blending, we used lambikken from five different barrels and not less than sixteen different brews. Most lambik was one- and two-years old, and about one third was three years old. This way, the weigthed average age of the blend upon bottling was more than 14 months. The final fruit intensity is about 300 grams of ripe yellow peaches per litre of Perzik. 100% 3 Fonteinen."

La cuvée 2021 de la saison du chai est issue d'une assemblage de six de nos meilleurs tonneaux ayant accueilli les différentes bières pendant 10 mois en moyenne. Au détail : 80% de saisons bien céréalières ensemencées avec différentes souches de levures "fermières" se marient harmonieusement à 20% de bière acide de fermentation mixte. Résultat : une bière complexe, rustique, vineuse, dont la longueur appelle les discussions passionnées entre amis... Bonne soif !

Northern IPA's have the clean, drinkability of a West Coast IPA, a dry and firm bitterness and a clear appearance while they benefit from the modern yeast character of the East coast styles. For long yeast character was something brewers were afraid of. Thanks to all this new yeast research, the IPA brewers world started embracing yeast again. Yeast is and always has been the soul of a beer.
This Northern IPA of 6.3% is brewed with NZ Cascade, Columbus and Motueka." -
Espiga Octopint
€5.28: 4"Octopint is a hazy-looking IPA with a double dose of dry hopping of two American hops. The Octopint octopus has traveled the oceans to collect the new Mckenzie hops in Oregon and the Ekuanot hops in the Yakima Valley. The new Mckenzie hops combine very well with the Ekuanot because they complement each other with the notes of tropical fruits they bring. The Ekuanot gives us more citrus and tropical fruit notes such as papaya and pineapple and even pepper and the Mckenzie more resinous notes, melon, grapes and memories of thyme. An ideal combination of fruits is created on a citrus and fresh base due to the notes of herbal plants that they also bring. In the aroma and flavor we will find all these notes accompanied by a silky sensation thanks to the combination of malts with barley. The octopus drinks the pints in 8 in 8, and you?"

Mills High Cut
€23.61"This is a new blend, created to capture the remarkably light and fresh citrusy character we find in some of our older barrels. It was made from a blend of pale beers, consisting of 2 barrels of 4 year old beer, and 2 barrels of 3 year old beer. The barrels making up the blend were selected for their combination of bright citrus acidity and balancing deep funk, to produce a complex yet elegant summery beer. The finished blend was dry-hopped with fresh whole-leaf Czech Saaz hops, for their wonderful noble aromatics, along with a touch of US Citra to highten the lemon/grapefruit notes of the fermentation. Bottled straight from the dry-hop tank to capture as much of the hop as possible, the finished beer then conditioned in bottle for 5 months."
