"Brew cooled in a coolship during a night in November 2019. The blend is made up from 20% spontaneous beer and beer of mixed fermentation from a selection of yeasts. Three years of aging in barrels of Chablis, Sémillon and red wine then enhanced it."

"BGM24 FUTURE Double Philly Sour IPA is a beer prepared in cooperation with the Japanese UCHU Brewing, as part of the promotion of the Beer Geek Madness 2024 festival. A powerful dose of refreshing fruit in the Sour IPA style, topped up with aromatic Strata hops and fruit purees of strawberries, bananas and calamansi. , which are complemented by aromatic additions of vanilla, coconut and cinnamon. Its sourness comes from a special strain of yeast that also produces lactic acid during fermentation."

"This special lager is a scaled-up Munich-Style Helles, with pleasing sweetness coming from the traditional grains. Bavarian hops add floral and citrus notes, playing against subtle vanilla and delicate tannins of the oak before a beautifully clean, graceful finish."

"A mixed fermentation sour brewed in collaboration with Nevel Wild Ales from the Netherlands. This Norwegian sour was brewed with locally foraged juniper and fermented with Kveik yeast, then aged in a Foeder for 18 months with our house mix culture. Season 2022-2023 Assemblage #10. bottled on 22/11/2022. "For this Oude specific Geuze, we blended lambikken from three different barrels and six different brews, brewed by both Brouwerij Lindemans (35%) and ourselves (65%). More than half of the lambikken were two-year and three-year lambikken, rendering the weighted average age of the blend upon bottling to moren than 22 months. All cereals used with the 3 Fonteinen brews were sourced in our own Cereal Collective."

"4 months bottle refermented with 100% Brussels Brettanomyces yeast.
Amber colored with copper reflections, very fruity (pineapple and red fruits), sustained by hop flavors and complex notes of old leather. In spite of its 6,5%, its dry and bitter finish makes it a surprising thirst-quencher."

"Farmhouse base beer aged for six months in neutral oak barrels. The beer was then moved to one of our custom built "Punch Down" barrels and added two pounds per gallon of figs. The fruit was punched down twice a day for two weeks then left to referment for two months."

"As part of the charity auction during the Denver Rare Beer Festival we offered up a brew day on our copper kettle. Our new friends Malia and Bryson Dunn were the lucky winners of that auction. Together we created Hop Farm. We took a straight forward 50/50 malt bill of wheat and pilsner malt and added eight hop additions during the boil. We chose the hops for their aromatic properties, not their bittering characteristics. This beer shows how you can layer in amazing hop character without creating a bitter hop bomb. Enjoy!"

Raspberry Session Mead. BB is 09/21

A collaboration between Boon and Mikkeller. Blend with some acetic acidity.

"Kriek Lambiek is flat due to the bottle fermentation being limited. This to maximise the fruit aromas and flavours. The content of sour cherries (Prunus Cerasus L.) is about 40kg per 100l Kriek."

BA blond sour beer (Zure van Tildonk) aged with sour cherries and then aged six more months in Whiskey barrels from Brouwerij Het Anker.

"We brewed a traditional turbid mash as they would do in most Lambik breweries in Brussles to generate lots of starch for the Brett to work on slowly over a year of fermentation in our Foeders, giving a soft funkyness light sour edge with a balance of fruit forward sweetness from the apricots we added 1 month prior to packaging."
