    Season 2019-2020. Assemblage #25 bottled on 16/01/20. "This specific Cuvée Armand & Gaston has been blended with lambikken from seven different barrels and foeders and eight different brews. The oldest lambik was brewed in the first days of 2017, which is more than four and a half years prior to the release. We let this bottle condition for an extended time in our own cellars, and we will tuck away part of this blend for extended ageing in a beautiful, but undisclosed farm cellar somewhere in the Pajottenland."

    Season 2021-2022, Assemblage #26. Bottled on 03/02/2022. "For this first ever Cassis, we macerated freshly harvested cassis berries (blackcurrants) on an ex-Bordeaux barrel for a good four months. The lambics used for macerating and blending were all two years old, and originating from two different barrels and eight different brews. The weighted average age of this blend clocks at 26 months. The final fruit proportion is 313 grams of cassis berries used per litre of finished fruit lambik. The berries were manually picked at Purfruit, a small community supported orchard in West-Flanders, Belgium.."

    "Poere Di Cwin is the word used to designate quince in Wallonian dialect. A blend of saison (spring barley, Wallonian Winter barley, spelt), 1 year old lambic and Wallonian quince, fermented for 1 year in ex-Meursault barrel. Aside from the rustic notes from the saison yeast and the lambic microflora, the nose is comforting with warm notes of wood, vanilla, cloves as well as a fresh component reminiscent of tea, jasmine, apple, quince and a mineral touch. Taste reflects the nose together with notes of lemon, tangerine curds, pillowy grain backbone and a mellow body. This beer is the culmination of our efforts to bring an elegant beverage from ingredients (quince, winter barley, wild yeast & bacteria) that once were considered too rustic by the public.     Season 2021-2022 Assemblage #28. Bottled on 08/02/2022. This Dornfelder/Kriek is a blend of kriekenlambic and grape lambic, in a 22/78 cut. The fruits macerated for a weighted average of almost six months. We used two-and three-year old lambics for maceration only as there was no backblending involved. The lambics originate from three different barrels and thirteen different brews. The weighted average age of this blend is a good 20 months. The final fruit proportion is 486 grams of fruit used per litre of finished fruit lambic."

    Season 2021-2022 Assemblage #75. Bottled on 24/05/2022 "This particular blend of Oude Geuze consists of nine different brews originating from nine different barrels. More than 80% of the blend consists of lambikken brewed by ourselves. More than 60% of the blend consist of lambikken of two, three and four years old, bringing the weighted average age to more than 28 months. Half of the combined grain bill was composed of cereals that we sourced from our Cereal Collective in and around Pajottenland."

    "Our benchmark mixed fermentation saison was aged for six months in oak to develop it’s distinctive flavour profile. The beer then spent a further three months on fresh Victoria and Marjorie plums. The sweet, yellow flesh gives a deep richness of flavour, whilst the dark skins lend colour and a balanced tartness to the beer."

The lambikken used were one-, two-, three- and four-year old. This renders the weighted average age up to more than twenty-six months. Lambikken were brewed by ourselves, as well as De Troch and Lindemans."

    Season 2022-2023 Assemblage #8. Bottled on 17/11/2022. "For this Oude Geuze, we blended lambikken from three different barrels and six different brews, brewed by both Brouwerij Lindemans (38%) and ourselves (62%). More than two thirds of the lambikken were two-year and three-year lambikken, rendering the weighted average age of the blend upon bottling to moren than 24 months. All cereals used with the 3 Fonteinen brews were sourced in our own Cereal Collective."

    Season 2022-2023 Assemblage #40. Bottled on 01/02/2023. "This is our first fully organic Oude Kriek! We macerated sour cherries for more than 11 months on one- and two-year old lambik, before blending with some more two-year old lambik. Lambikken originate from three different barrels and six different brews. All of the grains were sourced in our own Cereal Collective, and half of the hops come off Belgian fields. The weighted average age of the blend is more than twenty months. The final fruit intensity is 350 grams of sour cherries per finished litre of Kriek."

    "The 3rd release of DANSAERT & the 1st collab brewed back in February 2020 with Juguetes Perdidos. This Flemish Red-inspired beer was coolshipped and barrel-fermented in reworked Bordeaux barrels. One barrel was also pitched with a culture JP brought from Argentina. They received this PH1 culture from Peter Bouckaert, who started the sour barrel-ageing program at New Belgium."
