As the name suggests, it imparts a fantastic aroma to the beer, reminiscent of a bouquet of flowers from the Far East. The Lambic harmoniously blends with the fruity and floral notes of the flower."

"Jim Beam barrel-aged barley wine was blended with a selection of stouts aged in Heaven Hill barrels for over 2 years in a ratio of 25% barley wine to 75% imperial stout. The warming fig & chocolate flavors from our stout mingles with the rich caramel toffee notes of the barley wine while the barrels present the palate with a rich oak and bourbon aftertaste."

"With a love for wood aged beer in Rackhouse we decided to age our Pilsner in one of our foeders for 6 months which has resulted in a rustic wood aged Pilsner that is refreshing yet complex. With a balanced malt character, dry finish and a slight funk edge from the wood aging. We are excited to experiment more with this style."

"X Anniversary 1/10 Imperial Stout BBA Coconut, Cocoa Nibs - the first in a series of anniversary beers brewed in collaboration with friends from 3 Sons Brewery. A blend of two Imperial Stouts – mix of one aged for over 14 months in Heaven Hill barrels with the same stout aged for 16 months in Buffalo Trace barrels. This union of thick and intense stouts was created using a whole range of favorite specialty malts, extended boiling, and the "double mash" technique. The dessert-like chocolate flavors from the malts are intensified with the addition of cocoa nibs, while the coconut notes derived from barrel aging are amplified with a generous addition of coconut flakes. Additionally, the beer features hints of noble alcohol, bourbon, vanilla, and oak."

"X Anniversary 3/10 WILD#29 Pine Ale - the third in a series of anniversary beers brewed in collaboration with friends from Hudson Valley. Brewed in April 2023, this beer was fermented with our blend of wild yeasts and bacteria. The base beer consists of a mix of Pilsner malt, wheat malt, and oat flakes. Pine shoots were added at several stages – during the whirlpool, during active fermentation, and right before bottling."

This exclusive Oude Gueuze has been carefully blended and bottled in a limited edition of only 777 magnum bottles and 2.222 75cl bottles. This beer originates mostly from our oldest foeder in which lambics from different barrels and foeders were blended and aged further together. The weighted average age is 3 years, with inclusion of our oldest lambic from our first brew in 2019 and our latest youngest lambic, to complete the circle for this unique beer."

Season 2017-2018. Assemblage #57.. bottled on 22/05/18. "This particular Cuvée Armand & Gaston has been blended with lambics from 7 different barrels and originating from 9 different brews. The oldest portion of lambic was brewed on the 21st of October 2014. While blending, some local honey was added."

"Beer of spontaneous fermentation, the Oude Roussanne Tilquin à l'ancienne is made from the fermentation of 260 g of Roussanne grapes by liter of lambic. Unfiltered and unpasteurized, this beer is refermented in the bottle."
