    Season 2021-2022, Assemblage #92. Bottled on 20/07/2022."For this small batch of Aardbei, we macerated locally grown and hand-picked strawberries on jonge lambik. Afterwards, we blended with three-year old lambik. The weighted average age of this strawberry lambik clocks at more than nineteen months on the moment of bottling. The fruit proportion is 350 grams of strawberries per litre of finished Aardbei. Half of the cereals that we used while brewing, originate from our Cereal Collective. Bottle count: 392."

    "Since traveling to the west coast that gave this style its name, we’ve been dreaming of the new version of American west coast IPA we came to love there: light, crisp and dry as always, still decidedly bitter, but also juicy and crushable. We took inspiration from our friends at Green Cheek and Highland Park to create our own. Adding corn and rice to give it a bright, light base and using the water profile of a New England IPA for a soft mouthfeel balanced by aggressive hopping for a snappy bitter bite. A blend of old school C-hops for some classic citrus and pine aromas with some new school favorites to add some juicy fruit to the bouquet.."

"For this blend of Oude Geuze, we blended not less than five barrels of lambic, originating of eleven brews, of which two thirds was brewed by 3 Fonteinen and one third by Brouwerij Lindemans. Almost 30% of the blend is lambic brewed before 2020, rendering the weighted average oge of the blend to more than 35 months on the moment of bottling"

    "This is a new blend, created to capture the remarkably light and fresh citrusy character we find in some of our older barrels. It was made from a blend of pale beers, consisting of 2 barrels of 4 year old beer, and 2 barrels of 3 year old beer. The barrels making up the blend were selected for their combination of bright citrus acidity and balancing deep funk, to produce a complex yet elegant summery beer. The finished blend was dry-hopped with fresh whole-leaf Czech Saaz hops, for their wonderful noble aromatics, along with a touch of US Citra to highten the lemon/grapefruit notes of the fermentation. Bottled straight from the dry-hop tank to capture as much of the hop as possible, the finished beer then conditioned in bottle for 5 months."
