Grape Ale

"Cette première collaboration a été brassée chez nous en septembre dernier. Base de saison en fermentation mixte ensemencée avec notre souche de levure ainsi qu'un cocktail de levures sauvages issu des bières de fermentation spontanée de chez Popinh. Nous y avons fait macéré du raisin belge (Muscaris) en provenance de Wijndomein Hoenshof durant les vendanges 2023. Macération de 3 mois et élevage en cuve inox, avant refermentation naturelle en bouteilles."

"A two-year-old beer of mixed fermentation, which spent the first 10 months in a foeder, then we added freshly harvested Riesling grapes from a vineyard in Lower Silesia. For the next 10 months, the beer fermented in wooden barrels. After bottling, the beer refermented in the bottle for an additional 6 months."
