    "A collaboration with 6 American breweries (Perennial, Off Color, Keeping Together, Yazoo, Somwhere Else, Little Animals) that visited us. We would like to point out from the outset that they are the ones who chose the name, after a well-'watered' brainstorming…This is a style of beer that we don't do too much at la Senne, and that's the whole point: a double Belgian-American IPA! It has a very beautiful amber color. Its nose evokes exotic fruits, mango, grapefruit, and strawberry. On the palate, its aroma is malty and hoppy at the same time, the latter reminiscent of orange marmalade, apricot, bergamot, and again strawberry. The ensemble is accompanied by a floral side, of the island flowers type. Its bitterness is fine and very balanced, and its character round and warming, with a touch of lime on the finish."

    "For obvious reasons, the Ukrainian kolos could no longer be "schieve"… No, he has to be victorious! Therefore we changed him to simply KOLOS, and she became female. Juliana Babii, brewer at Pravda Brewery, our friends in Lviv, crossed the Ukrainian-Polish border together with the refugees, to come brew Kolos with us in Brussels. Two days later she returned to her homeland at war, to keep on brewing there despite the horrifying conditions. Kolos is a refreshing summer beer. She is brewed with wheat, rye, spelt and barley malts, to pay homage to the grain culture of Ukraine. We dry-hopped her with Zachrava, a Ukrainian hop, which makes her floral and spicy in the nose. The profits of the sale will be donated to a solidarity fund that houses and feeds the massive amounts of refugee...

    "As you all know, we are celebrating the 20th anniversary of Zinnebir with three specials collabs. For this second collab, we visited French-Flanders and our friend Daniel Thiriez. This time we used a different set of hops to brew the recipe: Daniel selected 100% French hops, cultivated by a cooperative called Comptoir Agricole. The character of Zinnebir was well respected. However, her bitterness is a bit more rustic and she has a different kind of fruitiness. We detect some physalis and different floral, herbal and spicy notes."

    Saison blended with lambic from Cantillon and aged in barrels. "An extremely complex but at the same time very refreshing beer. It somehow resembles a hoppy gueuze with a distinct bitterness. Indeed, the Saisons were generously hopped for the well-known keeping properties of hops. Also, they were often dry-hopped, as is the case here. Saison de la Senne has been barrel-aged for three years before bottling. Amber in color, its nose reminds one of Lambic, with notes of fallen apples, wood, leather, and the typical funky character of the Bretts. In the mouth, a soft tartness is present, quickly leading to dryness. The aromas of the nose are completed by those of spelt and rye, quince, green gooseberries and a complex vinous character. The finish is bitter but perfectly in balance."

    Saison van de Bruwer is a spelt Saison, dry-hopped and fermented with added Brettanomyces. It is blond, opalescent; its very persistent foam is creamy and fine. Very aromatic and fruity, its nose is reminiscent of pineapple, quince, apricot, and gooseberry. A ‘funky’ touch, typical of Brettanomyces, completes the picture. In the mouth these same flavors are intensified and accompanied by notes of cereals, a floral touch, and a final that evokes lime zests.
    Its attack is mellow, but its finish is dry and bitter — typical character traits of the 1920s Saisons.
