    DOUBLE DRY-HOPPED GRISETTE 4.7% "Soupe du Jour is a dry-hopped Grisette in collaboration with Brasserie de la Senne that was brewed to be paired with any of the thousands of dishes served at Norway’s biggest food festival, Gladmat. It has a soft body with subtle ester notes from the Belgian yeast strain, and a clear bitterness with fruity aroma and citrus flavour from Loral hops added during fermentation. It’s super drinkable and just like Soup of the Day, it should be on every menu."

    Nitro. "When our good friends from Põhjala came over from Tallinn to brew in mid-August, we warned them that they should pack for rainy, autumn weather. Upon their arrival in Stavanger there was a heat-wave on Norway’s West Coast and we had some of the nicest climate of year. This meant long days camping, swimming and enjoying the Norwegian wilderness all without the modern convenience of sunglasses. In this spirit, we crafted Staring at the Sun – a sour beer using a metric ton of raspberry juice with a touch of vanilla and a hint of tonka beans to bring out sweet notes of raspberry crisp with nuts and cinnamon."     When we made the original Times 8, we thought we could kill craft with a beer that brought an over-the-top, 16% ABV imperial pasty stout together with a Willy Wonka assortment of vanilla, cocoa, maple syrup, butterscotch and coconut. But once again, we were mistaken – we forgot to age it in barrels. So to put the cherry on top of this ridiculous collab, we placed the beer in fresh bourbon barrels for a year to suck out all of the spicy, vanilla oaky notes and smooth, boozy finish. We’re sure you’re going to love this monster of a stout – just make sure you bring an insulin shot and a pint of Pilsner to wash it down. "

    "According to some, humanity is born with a built-in urge to do bad things. In that spirit, we tried to do something good when we designed this beer, using a massive malt base to create depth and complexity with the right amount of roasted malt and caramel notes. Upon that base we layered more than twice the amount of cocoa nibs that we’ve ever used in a beer before, along with a healthy dose of vanilla. What came out of the tank is a full-on dark chocolate parade for the palate – combining accents of milk chocolate,
    vanilla, and freshly roasted coffee with a deeply, rich cocoa coating for the entire mouth. Some say that we’re all born into sin, so we may as well taste the forbidden fruit while we’re here."

    "Our Barley Wine is the most special beer we make, being produced only once every year. It’s a blend of different bourbon barrel-aged vintages that have spent more than a year in wood. We blend the different barrels, and add a bit of freshly brewed Barley Wine to obtain the best possible version.

    This year, the Barley Wine was brewed using a double-boil technique in which we evaporate the beer to a high concentration of sugar, add water back to the wort, and then boil it down again to increase Maillard reaction processes and build up some intense caramelization. We went easy on the hops to allow the malt and bourbon characteristics inherited from the barrels to be the champions of this beer."

    "This years vintage is a blend of time. We had a few lingering barrels from the fall of 2017. To that we added a few more from early 2019 and topped it off with some from the fall of 2019. All of the barrels we used were bourbon. The bulk of which were previously used for Heavin Hill, with some Angel’s Envy and even a couple Wild Turkey in there as well. But this years version isnt really about a big bourbon character, it’s more focused on the subtle bourbon flavors that are inherent to this beer. After the sweet punch right away subsides you will get flavours such as Dried figs, raisins, and vanilla.
