"Ça faisait longtemps qu’on avait envie de rebrasser une saison.
Et ça faisait aussi longtemps qu’on voulait retravailler avec des houblons belges.
C'est donc chose faite avec "Athanor".
Sur cette recette on voulait revenir à quelque chose de simple : une bière sèche, désaltérante, sans exubérance, où chaque ingrédient a sa place et peut s’exprimer.
Une base maltée simple et directe, avec une touche d’épeautre pour le corps et le côté rustique. Des houblons de Poperinge pour l’amertume fine, les notes herbacées, florales et légèrement épicées. Et puis les esters de saison, évidemment : poivre blanc, fruits jaunes, agrumes discrets, cette petite tension sèche et levurée qui donne envie d’y retourner.
Le résultat, c’est une saison d’été à l’ancienne dans l’esprit : simple, franche, sèche, expressive, et à l'indice de pintabilité maximale."

"3.9% Weizen (Champagne Barbu Wheat; Magnum & Hallertau Mittelfrüh) - A wheat beer brewed with an ancient wheat variety called Champagne Barbu. Our collaboration with the Welden organic farm is set to begin shortly. They plan to grow various ancient grain varieties for us, which we will then use in our beers. All these grains are ‘almost’ forgotten varieties that have been squeezed out of conventional agriculture because their yields are lower than those of commercial varieties. Naturally, these grains have different flavours and aromas to what we’re used to from these varieties. This beer is therefore a taster of several beers that will focus on the grains used. "

"6% New England IPA (Dolcita, Anchovy & Nectaron) - A collaboration with two Belgian breweries, Uncharted and BRSTWRD. The result was a 6% NEIPA featuring Anchovy (probably one of the first times this hop has been used in Belgium), Dolcita and Nectaron. So, plenty of lovely hops. A little detail: Dimitri and I got to know Matt Storms in Washington; as well as being a well-known brewer in Seattle, he’s also one of the developers of the Anchovy hop. The name (translated to "I actually prefer wine") came about when Tom (Uncharted) and Janos were complaining that they were sometimes so fed up with beer; after that, we started drinking wine for the rest of the tap takeover. Of course, we’re not fed up with beer, but the moment was too good to pass up."

"7.1% Double IPA (Magnum, Cascade & Amarillo) - This collaboration with SE10 from Hoboken resulted in a modern 7% Double West Coast IPA brewed with New Zealand Cascade and Amarillo hops. NZ Cascade (or Taiheke) was virtually impossible to get hold of in Europe, but we pulled a few strings to get our hands on the hops. Despite being a modern IPA (slightly cloudy, no caramel malts, and newer hop varieties than we used to have), it still has a very old-school ‘dank’ aroma! Dank you very much"

A 5.5% NEIPA that’s smooth, silky, and incredibly juicy. English pale malt, rolled oats, and a tropical yeast set the stage for a generous dose of Riwaka, Citra, and Idaho 7 hops, delivering tropical fruit, citrus, and that intense, fresh character we were looking for.

Avec cette West Coast PilsnerDDH, on a voulu créer une bière qui combine grande buvabilité et aromatique envoûtante. Sur une base de céréales 100% françaises, on a marié la finesse d'une bière de fermentation basse traditionnelle avec la subtilité de saveurs de la variété expérimentale américaine HBC 1134 aux formats HyperBoost et T90, associée au houblon français Triskel et au Citra. Ces variétés sont très complémentaires sur ce style de bière, et le résultat est à la fois "crisp" et savoureux!"

"Cette NZ Double NEIPA DDH associe 2 terroirs NZ différents mais complémentaires. Le Nelson Sauvin provient de la ferme Sunrise Valley (parcelles 16, 22, 21 & 9) sous un climat maritime doux qui apporte un brin de fraîcheur. Le Manilita, lui, pousse à la ferme Nelson Lakes (parcelle A1 de la vallée de Tutaki) sur un sol de limon sableux. Le combo est chargé en huiles et axé sur l'exotisme (mangue, passion). "
