2,97 €"A 5.4% weizen with a whopping 70% wheat malt was brewed with one of our long-serving bartenders at Dok. Johannes (better known by his nickname Joeri) joined forces with Janos to make a weizen the way he would like it himself. Lots of wheat, Weihenstephaner yeast fermented cold, a decoction mash and a noble hopping with Tettnanger." BBD 04/2025

DOK / Lucky Bay Do you can...
3,21 €"When the Australians from Lucky Bay Brewing came by, we brewed a style with them that sounded relatively unknown to us, an Australian pale ale. Low in bitterness, but bursting with Australian hop aroma. Enigma, Vic Secret and Ella… Yes, there are also very interesting hops growing on the other side of our globe. The New Zealanders have already proven it in the past, but the Australian terroir clearly has more to offer than just Galaxy. Since the people from Lucky Bay were in Europe preparing to start up their malt house, we also wanted to emphasize local grains and local malt houses. The raw barley from Hof ??Ten Dormaal and pilsner malt from Mouterij Dingemans formed the basis for this super smooth Aussie pale ale."

3,07 €"Our friend and handy man Gizmo, you can set your clock to that! 1 after half past three, and there he is, sitting at the bar! Usually with a ginger beer, but today with a drinkable 3.7% ABV Grisette. A firm granular undertone from the unmalted barley and spelt that complements the New Zealand hops. For such a low-alcohol beer, we certainly didn't hold back with the generous doses of Rakau and Mega Motueka."

3,37 €"A while ago we teamed up with Lallemand to test one of their new yeast strains called Aurora. This one is specially developed to brew Northern IPA's. What a pleasure to work with it, fast fermenting, wide temperature range and beautiful expression of the hop character.
Wait, what, another new type of IPA?....
Northern IPA's have the clean, drinkability of a West Coast IPA, a dry and firm bitterness and a clear appearance while they benefit from the modern yeast character of the East coast styles. For long yeast character was something brewers were afraid of. Thanks to all this new yeast research, the IPA brewers world started embracing yeast again. Yeast is and always has been the soul of a beer.
This Northern IPA of 6.3% is brewed with NZ Cascade, Columbus and Motueka." -
