Saison van de Bruwer is a spelt Saison, dry-hopped and fermented with added Brettanomyces. It is blond, opalescent; its very persistent foam is creamy and fine. Very aromatic and fruity, its nose is reminiscent of pineapple, quince, apricot, and gooseberry. A ‘funky’ touch, typical of Brettanomyces, completes the picture. In the mouth these same flavors are intensified and accompanied by notes of cereals, a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter — typical character traits of the 1920s Saisons. bbd 18/11/2024

"X Anniversary 10/10 Mixed Fermentation Honey Saison - 10th in a series of anniversary beers. Wild beer, fermented with a blend of wild yeast and bacteria from Stu Mostów Brewery. The idea for this beer was born during a meeting with B. Nektar Meadery, where the most interesting barrels were selected to create a unique blend of wild beers. A significant amount of Polish local multifloral honey from the Zloty Miód apiary was then added. As the wild yeast fermented the honey, the beer developed a dry profile while retaining a pleasant sweet floral honey aroma. Before bottling, an extra portion of honey was added, enabling natural carbonation through bottle refermentation. "

"Xino Xano is our spring/summer seasonal release. We use a traditional no boil Berliner Weisse brewing method, 50% organic Belgian malted barley, 25% Belgian malted wheat, 25% Spanish flaked wheat, co-fermentation with our house yeast and lactic acid bacteria, then finished with a big dry hop addition (variety varies). Gluten-Free IPA. "Our IPA par excellence is crystalline, light orange with orange reflections and a fine bubble that forms a slightly beige foam. In the nose, notes of earthy, pine and resin are perceived along with shades that evoke citrus skin. In the mouth it presents a cheesy carbonation with bitter flavors, a spicy point and a certain presence of malt that reminds you of bark of bread."

"This beer is a tribute to two great American beers which are named after historical figures from Ancient Rome: Pliny the Elder (an author, naturalist and natural philosopher) and Pliny the Younger (a lawyer, author and magistrate). What remains a lesser-known fact is that the two Plinys were actually uncle and nephew, so it seemed of the utmost importance to create Pliny the Oncle and tell the rest of the story. Oncle means "uncle" in Catalan."

We took inspiration from our friends at Green Cheek and Highland Park to create our own. Adding corn and rice to give it a bright, light base and using the water profile of a New England IPA for a soft mouthfeel balanced by aggressive hopping for a snappy bitter bite.
