100% Gelber Muskateller. "Method: After a maceration on full cluster for a few hours, the grapes were pressed and then completely transferred to a stainless steel tank. There the wine continued to ferment and mature on its coarse lees for 8 months. The bottling was done with as little oxygen and movement as possible to keep the wine fresh and crisp." 100% Pinot Noir. "Method: Light maceration of Pinot Noir. The grapes were partly crushed and partly macerated with full cluster for a few hours. "The story behind the name is amusing: Brewing in our very first brewery in Sint-Pieters-Leeuw was entirely manual and really exhausting. For lunch, we dreamed of a light and flavourful table beer to quench our thirst... One day, Bernard had the idea to mix a Taras Boulba with an equal amount of sparkling water to make a "small beer". A super refreshing beer that wouldn’t prevent us from getting back to work in full shape! And we decided to call it the "Petit Boulba"...We reused the name as a reminder of the early days, but of course we made the beer according to a specific recipe. Petit Boulba is a blond beer with only 2.8% alcohol, with a blonde and cloudy appearance due to the use of wheat and oats. Its aroma is very floral, with notes of fresh cereals. On the palate, these aromas develop further and blend with notes of white fruits and fine herbal touches. Petit Boulba is slightly bitter and has a very dry and super refreshing finish. As spring has been waiting so long to arrive, I guess we’ll just skip it entirely and go straight into summer!"

Season 2021-2022 Assemblage #126. Bottled on 13/10/2022 "For this Oude Geuze, we blended lambikken originating from six different barrels and six different brews, brewed by both Brouwerij De Troch, Brouwerij Lindemans and ourselves. Eighty percent of the blend consists of three- and four-year old lambikken, bringing the weighted average age to almost 30 months on the moment of bottling. Of the 3 Fonteinen brewed lambikken, all cereals were sourced in our own Cereal Collective."

Season 2022-2023. Assemblage #5 bottled on 08/11/2022. "For this specific Cuvée Armand & Gaston, we blended lambikken from four different barrels and six different brews. Almost half of the lambikken used were three-year and four-year old lambikken, rendering the weighted average age of the geuze blend to more than 25 months on the moment of bottling. More than 60% of the cereals used during brewing were sourced in our Cereal Collective."

Season 2022-2023, Assemblage #23. Bottled on 10/01/2023. "For this Pruim Mirabelle, we macerated Belgian Mirabelle plums for four months on three-year old lambik, before blending with more of such old lambik. The oldest lambik was brewed in October 2019. The resulting weighted average of this blend is more than 30 months. The final fruit concentration is 364 grams of Mirabelle plums per litre of Pruim."

"In 2022, we had the incredible opportunity to pick grapes at the winery Andi Mann. The Dornfelder grapes macerated in the cider for four weeks and were pressed later on. The wine aged in barriques for nine months. It can be drunk like a Lambrusco, but it's even better! It has a delicious taste with notes of violets, raspberries and Amarena cherries."

Fresh acidity, that goes well with Ceviche, leek or summer dishes." Bottled in October 2023"
