It has been boiling for many hours, brewed with pale malt with white candy sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age."

L'Ermitage / La Mule Pils...
€3.81: 4"In March 2023, Joël brewed and inoculated 20hl of classic pilsner must at the Mule brewery. We transferred it to a foeder equipped with a cooling system to ensure true bottom fermentation. In September 2023 , we participated in the harvest of Brussels hops, and dry-hopped our pils with 100% Brussels hops. At the beginning of 2024, after 10 months of fermentation and maturation in foeder, we put it in bottles and kegs. After 2 months of natural refermentation, this beer is now finally available for tasting. The taste is marked by the lager yeast esters, the vegetal aromas of fresh hops, and of course the wild notes of the foeder."

DOK Johannes De Weize II

De la Senne Petit Boulba
€2.57"The story behind the name is amusing: Brewing in our very first brewery in Sint-Pieters-Leeuw was entirely manual and really exhausting. For lunch, we dreamed of a light and flavourful table beer to quench our thirst... One day, Bernard had the idea to mix a Taras Boulba with an equal amount of sparkling water to make a "small beer". A super refreshing beer that wouldn’t prevent us from getting back to work in full shape! And we decided to call it the "Petit Boulba"...We reused the name as a reminder of the early days, but of course we made the beer according to a specific recipe. Petit Boulba is a blond beer with only 2.8% alcohol, with a blonde and cloudy appearance due to the use of wheat and oats. Its aroma is very floral, with notes of fresh cereals. On the palate, these aromas develop further and blend with notes of white fruits and fine herbal touches. Petit Boulba is slightly bitter and has a very dry and super refreshing finish. As spring has been waiting so long to arrive, I guess we’ll just skip it entirely and go straight into summer!"

€3.21"When the Australians from Lucky Bay Brewing came by, we brewed a style with them that sounded relatively unknown to us, an Australian pale ale. Low in bitterness, but bursting with Australian hop aroma. Enigma, Vic Secret and Ella… Yes, there are also very interesting hops growing on the other side of our globe. The New Zealanders have already proven it in the past, but the Australian terroir clearly has more to offer than just Galaxy. Since the people from Lucky Bay were in Europe preparing to start up their malt house, we also wanted to emphasize local grains and local malt houses. The raw barley from Hof ??Ten Dormaal and pilsner malt from Mouterij Dingemans formed the basis for this super smooth Aussie pale ale."

A light sulfur character, typical of bottom-fermentation yeasts, gives the beer its distinct personality. Canedisenne has a mild bitterness, balanced by a fruity sweetness in the finish."

DOK 1 Na Hlaf 4 En Gismo Is...
€3.07"Our friend and handy man Gizmo, you can set your clock to that! 1 after half past three, and there he is, sitting at the bar! Usually with a ginger beer, but today with a drinkable 3.7% ABV Grisette. A firm granular undertone from the unmalted barley and spelt that complements the New Zealand hops. For such a low-alcohol beer, we certainly didn't hold back with the generous doses of Rakau and Mega Motueka."

€3.07"The 100PAP is a 6% alcohol Pale Ale type beer. It has a magnificent amber-copper color. On the nose, a delicious esters fermentation (banana, pear) flourishes as well as an exotic and spicy touch. On the palate, lovely malty aromas of caramel and crème brûlée bring its roundness, and are served with fruity (banana, apricot and lemon) and spicy notes where juniper and its finely minty side are mixed with coriander, and white pepper, all balanced with a slight bitterness. A generous beer, just like its partners !"

€2.97Saison van de Bruwer is a spelt Saison, dry-hopped and fermented with added Brettanomyces. It is blond, opalescent; its very persistent foam is creamy and fine. Very aromatic and fruity, its nose is reminiscent of pineapple, quince, apricot, and gooseberry. A ‘funky’ touch, typical of Brettanomyces, completes the picture. In the mouth these same flavors are intensified and accompanied by notes of cereals, a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter — typical character traits of the 1920s Saisons. bbd 18/11/2024
