    "The next beer in our discovery series of trial batch lagers.
    Italian Pilsner has taken the world by storm since its emergence in the late 00's. Originally brewed as a German pilsner by Birrificio Italiano outside Milan. Agostino, the brewer added some tweaks to make the recipe more exciting for local drinkers including an increased amount of late-stage hops which give the beer a more pronounced hop character and soft floral aroma from the German hops. During the summer at festivals we were lucky to have a few chances to drink the OG, fresh Tipo Pils in Italy and this is our tribute to that beer. We lagered this beer for over 40 days so it has an incredibly smooth finish. "

    "Saison Hallertau is a blend of four barrels from three worts brewed in January, March, and August 2019. It was dry-hopped with whole leaf Hallertau Blanc, Mandarina Bavaria, and Fuggles.The beer is a bitter, amber saison with a good balance of malt, yeast, and hop flavour. A small quantity was released relatively fresh last year through Favourite Beers, as a tribute to Nicky Norwood, wife of owner Leigh. The further ageing since has allowed time for the wild yeast to significantly modify the hop aromatics and add further depths of funk."

  • Mills Still

    "Still is a single barrel bottling of four year old beer, brewed in March 2018. We have been hoping to find a barrel that would have enough character and bite to exist without the need for carbonation. The wort was made using a turbid mash and underwent an extended boil with large quantities of aged hops. After two nights in our coolship, the wort was transferred to a single 500 litre barrel for four years of fermentation and maturation. The resulting beer was bottled still, without the addition of sugar to produce a refermentation. It has a significant richness for the abv, balanced by a striking hop bitterness, and lingering tannin from the four years in oak."

    "The Dickens is our take on one of Jonny's favourites, the Belgian Golden Strong. An effervescent, heady, pale, dry, and lightly bitter beer that remains delicate and balanced despite its considerable strength. A clear wort was drawn from an infusion mash of pilsner malt and spelt. Large quantities of European hops and cane sugar were added during the boil. Fermentation took place in our open coolship at warm ambient summer temperatures. The young beer maturated in large oak casks with wild yeast and bacteria until the winter. Finally, the beer is dry-hopped with whole-leaf hops and bottle conditioned for three months before release."

    "We'd been wanting to brew another saison for a long time.
    And we'd also been wanting to work with Belgian hops again for just as long.
    So, we finally did it with "Athanor."
    With this recipe, we wanted to return to something simple: a dry, thirst-quenching beer, without any exuberance, where each ingredient has its place and can express itself. A simple and straightforward malt base, with a touch of spelt for body and a rustic character. Poperinge hops for a subtle bitterness, herbaceous, floral, and slightly spicy notes. And then the saison esters, of course: white pepper, yellow fruits, subtle citrus, that little dry, yeasty tension that makes you want to come back for more.
    The result is an old-school summer saison in spirit: simple, straightforward, dry, expressive, and with maximum drinkability."

    "3.9% Weizen (Champagne Barbu Wheat; Magnum & Hallertau Mittelfrüh) - A wheat beer brewed with an ancient wheat variety called Champagne Barbu. Our collaboration with the Welden organic farm is set to begin shortly. They plan to grow various ancient grain varieties for us, which we will then use in our beers. All these grains are ‘almost’ forgotten varieties that have been squeezed out of conventional agriculture because their yields are lower than those of commercial varieties. Naturally, these grains have different flavours and aromas to what we’re used to from these varieties. This beer is therefore a taster of several beers that will focus on the grains used. "

    "6% New England IPA (Dolcita, Anchovy & Nectaron) - A collaboration with two Belgian breweries, Uncharted and BRSTWRD. The result was a 6% NEIPA featuring Anchovy (probably one of the first times this hop has been used in Belgium), Dolcita and Nectaron. So, plenty of lovely hops. A little detail: Dimitri and I got to know Matt Storms in Washington; as well as being a well-known brewer in Seattle, he’s also one of the developers of the Anchovy hop. The name (translated to "I actually prefer wine") came about when Tom (Uncharted) and Janos were complaining that they were sometimes so fed up with beer; after that, we started drinking wine for the rest of the tap takeover. Of course, we’re not fed up with beer, but the moment was too good to pass up."

    "7.1% Double IPA (Magnum, Cascade & Amarillo) - This collaboration with SE10 from Hoboken resulted in a modern 7% Double West Coast IPA brewed with New Zealand Cascade and Amarillo hops. NZ Cascade (or Taiheke) was virtually impossible to get hold of in Europe, but we pulled a few strings to get our hands on the hops. Despite being a modern IPA (slightly cloudy, no caramel malts, and newer hop varieties than we used to have), it still has a very old-school ‘dank’ aroma! Dank you very much"
