Perhaps you remember Jean-Michel, a release that was blended from puncheons and dry-hopped with French Barbe Rouge. The red fruit elements of the hop varietal and the vanillin present in the wood merged together to create an astounding note reminiscent of strawberry pound cake. This convinced us to continue exploring this path in our oak program, and what led to Gus! Starting with a farmhouse ale base featuring Salish Blue wheat from Skagit Valley Malting, Gus completed primary fermentation in oak puncheons and continued to age for 7 months. "Whishing Well is a turbid IPA in which wheat in the form of wheat malt and wheat flakes was used in an amount of almost 50% of the total filling! Intensively hopped with an Australian – American – New Zealand schnitzel that gives a large amount of refreshing tropical and citrus aromas."

"Mésange is our expression of balance. A light Saison. Quick soured and then barrel aged on our house culture. Slightly wild,, slightly hoppy but above all very drinkable.

"When the hop farmers start harvesting, we start brewing our Hop Harvest. The fresh, undried hop flowers are picked in the morning, and on the same day they are used in the Hop Harvest-brew, straight from the field. Because we use 'wet hops', the beer has a fresh, floral, and pleasantly bitter taste. By changing the recipe every year, the outcome is always a surprise. Drink this beer young if you can, that's when the wet hop shows of their floral character the most."

"It's cold and energy costs are too high? We have a solution for you: warm yourself up internally with a Coucou Puissant! Her name is a tribute to the last squat where Bernard lived, and whose inhabitants campaigned passionately for access to housing for all. On top of that, it was in the cellars of this squat that Zinnebir was born in 2002. She is an exhilarating Amber Ale, generously dry-hopped with German hops. Her nose evokes stone fruits from the South, as well as persimmon. We also find a whole bouquet of exotic flowers. These nuanced aroma's are followed by voracious notes of biscuity malt. In the end she develops a beautiful and long bitterness, which harmoniously brings everything in balance."
