Gueuze blend containing 4 YO lambic

Elderflower infused lambic

"Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime."

Season 2023-2024 Assemblage #54. Bottled on 18/06/2024. "For this classic version of the Zenne Y Frontera Blend 54, we blended not less than fice different barrels of sherry aged lambik. The barrels are a mix of very old Oloroso and Amontillado barrels from two small family bodegas. Bodega Joséfa Perez is located in the hearth of Jerez de la Frontera and Gutiérrez Colosia is locted at El Puerto De Santa Maria. We aged more-than-three-year-old lambikken for an additional year on these sherry casks. consequently, the weighted average age of this blend is over 50 months."

Season 2023-2024 Assemblage #55. Bottled on 18/06/2024. "For this classic version of the Zenne Y Frontera Blend 55, we blended all of our Josefa Perez Barrels. this tiny bodega in the heart of Jerez de la Frontera inspired a lot of the other independent and family owned bodegas through their high quality and steadfast vision. this blend consists of lambik aged on four oloroso barrels and two amontillado barrels.we matured three-and-a-half-year and older lambik for anothereleven months on these sherry barrels. consequently the weighted average age of this blend is over 50 months."

Season 2022-2023 Assemblage #58. Bottled on 23/03/2023. "For this Oude Geuze, we blended not less than four barrels with lambikken originating from ten different brews. The featured lambikken were young, two, three and more than five years old. This brings the weighted average age of the blend to more than 32 months on the moment of bottling, and more than 56 month on the moment of the release. Of the 3 Fonteinen brewed lambikken - making up more than 60% of the blend, more than 60% of these were brewed with local barley and wheat, all coming form organic farmers in Pajottenland."

100% Pinot Noir. "The grapes were harvested north of the Yonne from thirty-year-old vines. Fermented using its own indigenous yeasts and without any additives, this wine underwent a short maceration before pressing, followed by a year of aging in stainless steel vats. No added sulfites. Batch-PN23"

Assemblage de plusieurs fûts de fermentation ouverte, élevés 4 et 3 ans sans ouillage. L'équipe de la brasserie a ensuite laissé macérer le marc de Pineau d'Aunis pendant une semaine.

Sherry Finish is a beer aged for a year in one of the Popihn brewery 's foudres, which were then transferred to two Sherry barrels for further aging.

La cuvée 2021 de la saison du chai est issue d'une assemblage de six de nos meilleurs tonneaux ayant accueilli les différentes bières pendant 10 mois en moyenne. Au détail : 80% de saisons bien céréalières ensemencées avec différentes souches de levures "fermières" se marient harmonieusement à 20% de bière acide de fermentation mixte. Résultat : une bière complexe, rustique, vineuse, dont la longueur appelle les discussions passionnées entre amis... Bonne soif !

Fellowship 2024 Ale No 5. "Blend of 80% Cuvée de Mortagne Sherry Olorosso & 20% White Port BA, both aged for 3 years on barrel."

Fellowship 2024 Ale No 1. "Narya is a spontaneous fermented beer, where wort was added to Divico grapes from Winery Hoenshof in Belgium. After 7 months of maceration and fermentation, Narya was barrel aged on Chateau Siran Margaux barrels for another 6 months."

Fellowship 2024 Ale No 6. There lies, tucked in the heart of the Shire, a place where tales grow tall and mugs are never empty - The Green Dragon Inn. It is a name spoken with warmth, laughter, and the clink of well-worn tankards. Born of mixed fermentation and aged with the patience of old innkeepers, Phi was laid to rest in barrels of Wild Turkey Bourbon and Tawny Port, where time wove its magic. The sourness sings like a fiddler at dusk, lively and bright, while the barrel's kiss adds depth, warmth, and echoes of distant lands. Thus, the beer took on a name worthy of song: The Green Dragon Inn - a drink to rouse the heart, loosen the tongue, and remind all who sip it of home, hearth, and the road that ever goes on."

Fellowship 2024 Ale No 3. "In the cellars where silence reigns and the stone walls remember songs long forgotten, a noble brew was laid to rest. Theo, as it was once called, found slumber in a barrel of Margaux red wine-oak steeped in the blood of vineyards from lands far beyond the sea. For two years it dreamt beneath the earth, drawing wisdom from the wood, strength from the wine, and spirit from the stillness. When it awoke, it was no longer Theo. It had become Theodén - a kingly name, bold and grave, bearing the weight of time and the richness of its lineage. A beer for those who would drink with honor, and remember."

It is from this legend that a brew takes its name. For three long years, it slumbered in barrels that once cradled the deep, fortified wines of Madeira - an island whispered of in old tongues, distant yet resonant with warmth and wonder. The wood, kissed by salt and sun, gave freely of its memory. Thus was born Tol Eressëa, a beer touched by the echo of elven shores - gentle, deep, and radiant with the light of the West. Not merely a drink, but a remembrance of things unseen and far away."

"Lambic beer is a very versatile beer inspiring creativity. The Family Brewery Lindemans proves this once again with the launch of the BlossomGueuze, an old gueuze with a twist. The result? A very original and unique beer, made with elderflower. Perfect for food pairing or as a tasty aperitif! BlossomGueuze is 2 to 3 year old lambic aged in wood, blended with 12 month old lambic and elderflower. After refermentation in the bottle this gueuze has a golden colour and combines the sour taste of lambic with the natural and fresh aromas of elderflower." Best Before Date is 2021. Crwon cap might be abit rusted due to the long cellaring.
