Blend of 1 & 2 year old lambics from two barrels that were really appreciated by the brewers for their fruity notes. The brewer recommends to consume this soon as this blend contiains lots of young lambic, there is a "risk" it will overcarbonate over time.

Lambiek aged with sour cherries.

Berslais Kadet aged 12 months in lambic barrels which resulted in a spontaneous fermentation of the beer. BBD is 15/05/2021

Spontaneous fermented, coolshipped and aged in wooden barrels and matureed with Barbera grapes.

Oud Bruin where the wort was boiled for 16h instead of the classic 1.5h which give more caramelised aromas.

Unblended 3 year old Lambic brewed in 2015.

"Duchesse Cherry is a blend of 1 and 2 year-old Duchesse de Bourgogne with local, sour cherries added to the maturing beer. The malt beverage is aged in oak casks, and utilizing whole cherries from the Limburg region of Belgium, as opposed to cherry syrup that is sometimes used in cherry beer production, Duchesse Cherry truly lives up to its name" best before is 01/06/2023

Unblended 3 year old Lambic brewed in 2014 and bottled in 2017.

Assemblage #26. bottled on 08/03/18. Blend made with 100% lambic brewed by 3 Fonteinen from 6 different barrels originating from 5 different brews. The 3 year old lambic accounts for almost a third of this blend.

Blend made of 1,2 & 3 year old lambics (Boon, Girardin and their own brewed lambic they call: "Spierelambic" after the tiny river that runs near the brewery).

"Farmhouse base beer aged for six months in neutral oak barrels. The beer was then moved to one of our custom built "Punch Down" barrels and added two pounds per gallon of figs. The fruit was punched down twice a day for two weeks then left to referment for two months."

Assemblage #79. bottled on 26/09/18. Blend made with 100% lambic brewed by 3 Fonteinen from 6 different barrels originating from 9 different brews. 48% consists of semi-old and old lambic from 5 deiffernt brews.

Assemblage #81. bottled on 03/10/18. Blend made with 100% lambic brewed by 3 Fonteinen from 8 different barrels and originating from 9 brews. This blend contains 47% matured and old lambics from 6 different brews.

First ever Hommage on small bottles. Bottled on 13/09/18

Assemblage #82. bottled on 04/10/18. This specific Oude Kriek has macerated for 6 months with the cherries in 4000 lts oak foeders. The lambics in this blend come from 2 different barrels and originating from 2 different brews from 3 Fonteinen.

"In Gooik's fields ripen the most beautiful apples, those appels ferment together with lambic to this Pajotse cider. This variety of apples gives an intense extra flavor to the lambic that is fermented on wooden barrels. 45kg on 100 liters young lambic."

Cuvée Saison (Blend of Saison, Brett Saison, Sour Saison) with organic peaches from Ordal (Barcelona). BBD is 10/10/2024

Season 2018-2019 Assemblage #12. bottled on 10/12/18. Blend made from 6 different barrels originating from 9 different brews. Almost half of the blend consists of 3F Lambic.
