€29.11Season 2023-2024, Assemblage #26. Bottled on 07/12/2023. "For this Wijnbergperzik, we macerated vineyard peaches from the field of Ludo Rosseels, Gelrode, Brabant, Flanders. For macerating and blending, we used one- and two-year lambikken, originating from eleven different brews and five different barrels. The peaches macerated for more than three months on wooden barrels. The final fruit proportion is 398 grams of vineyard peaches per litre of Wijnbergperzik. About 70% of the cereals for this pure 3 Fonteinen blend used were sourced from our Cereal Collective."

"For this Oude Geuze, we blended three different barrels of lambikken, originating from seven different brews, brewed by two different brewers. A blend of one- and three-year old lambikken, in a portion of respectively 55% and 45%. On the date of bottling, the weighted average age is therefor almost 26 months. The 3 Fonteinen lambikken make 75% of the blend, and 75% of this volume has been brewed with local wheat and barley. While bottling, we added a bit of honey to the blend."

We foraged elderflowers next to the brewery and macerated the blossoms in the beer. The infused beer aged in oak barrels for 17 months. Notes of citrus, flowers and hay. €39.85"The Rozemarijn - Fennel Geuze is again a blend of 1, 2, 3, 4, 5 and 6 year old lambics from various lambic breweries from the Zennevalei. Maceration took place on both rosemary and fennel and this took place in 2 tanks. This allowed a nice balance to be found when blending. At the beginning of the pour we mainly get the taste of rosemary and the more we go to the end of the bottle, the fennel takes over the taste (anise-like taste). Of the lambic used, 80% has matured in a bourbon barrel. This also created more complexity."

With the oldest lambic over six-and-a-half years old, the weighted average age of this blend is more than 40 months on the moment of bottling. All cereals used for our own brews were sourced in Pajottenland."

"For this Oude Kriek, we macerated sour cherries for a full year and a few days on three-, fourand five-year old lambik before blending with some more three-year old lambik. As a result, the weighted average age of this blend clocks at more than 40 months. The final fruit intensity is 295 grams of sour cherries per litre of Kriek. 100% 3 Fonteinen."

€27.71Season 2022-2023, Assemblage #102. Bottled on 19/09/2023. "For this Rabarber, we macerated rhubarb from De Groentelaar, an all-organic farm in Pepingen, Pajottenland. We used one-, two- and four-year old lambik. The weighted average age of this blend is more than 27 months and the final fruit intensity hits 265 grams of rhubarb per liter of Rabarber."

This local wheat beer was brewed by Brussels-based Brasserie de la Senne using old wheat varieties from the cereal collective of Brouwerij 3 Fonteinen from Beersel in Brabant. Part of the brew was immediately drawn onto small bottles and sold out immediately. Another part of the brew matured further for three years in oak lambic barrels. In November 2023, this ‘matured’ Terf was lit with young 3 Fountains lambic, in a 55/45 ratio. This Wild Terf is the fruit of collaboration between brewers and farmer(s) around Pajot landraces and with a fair income for the farmer. Above all, it is an ode to the historical agricultural link between the Brabant countryside and Brussels."
