"This beer is inspired by cool nights in the great outdoors; sharing stories under the stars with a mug of hot cocoa, a full hip flask and marshmallows toasting over the glowing embers. Our Fireside blend is made up of some incredible dark beers, including some Barrel Aged Draugen, which is providing the underlying wisp of oakey smoke in the air. A heartwarming companion to the season."

"Fresh out of barrel the beer is full of chocolate notes, which Haunted House elevates further with cacao husks. These husks add some light milk chocolate notes, making sure everything stays drinkable through different dimensions of sweetness, with toasted coconut chips joining in creamy harmony in a sequence of sensations. Tripel Mash Barley Wine aged for one year in White Port barrels.

Lambic matured with blackberries. Around 300 grams of fruit per liter of lambic.

Lambic matured with a fine berry selection (Blackcurrant, red currant, strawberry, raspberry, blackberry and wild blueberry). Around 300 grams of fruit per liter of lambic.

"Beer of mixed fermentation, the Stout Rullquin is obtained from a blending of 7/8 of Rulles Brune (Stout de Gaume) and 1/8 of a blend of 1 year old lambics, which has matured for 8 months on oak barrels. Unfiltered and unpasteurized, this beer is refermented for 6 months in the bottle"

"The Oude Gueuze Tilquin à l'ancienne is a blend of 1, 2 and 3 years old lambic refermented in bottle for at least 6 months. "Oude" in flemish or "à l'ancienne" in french is an appellation protected by the EU and is restricted for traditional belgian gueuze in bottle."

Oud Bruin matured several months with raspberries.

"You know our Bruxellensis, a complex beer brewed with an indigenous Brussels yeast that we found in the "wild" nature of Saint-Gilles: the famous Brettanomyces Bruxellensis. We have made a version of this beer that has been able to mature for several months in old red wine barrels: the BRUXELLENSIS RESERVA. The result is a flavorful festival of red and black berries: wild strawberries, candied cherries, blackberries and blueberries. It has some woody notes of course, and the Brett adds not only fruity notes, but also accents of old leather. The aftertaste is dry with a delicious bitterness. A wine-like and complex beer that is at the same time very refreshing and easy to drink."

Russian Imperial Stout

Base Imperial Stout used for the Kameradski Balsamico

"Strong coffee aroma, we choosed this specific coffee for its sourness. It gives some beautifull notes of raspberry, red berries, strawberries, hazelnuts, butter and citrus. We aged this beer for 1 year on 2 Buffalo Trace Bourbon barrels and 1 Whiskey Sauterne Barrel. After 10 months of aging we added 2kg fresh roasted coffee beans (By Crossroast in Antwerp) and 15 Vanillabeans in each barrel. After 2 more months we blended the barrels together and added some more vanillabeans. Result is a very complex coffee stout. Lots of barrel notes, a crisp sourness of the coffee that gives the beer a high drinkability." BBD is 24/12/2024

Season 18/19 Assemblage #110. Bottled on 19/09/19. "For the first time ever, we have blended raspberry lambic and sour cherry lambic rather than macerating both fruits together, in order to find balance throughout the increasing fruit varieties. The fruit proportion is 83% raspberries and 17% sour cherries, the lambics originate from 6 different barrels and 5 different brews (25% 3 Fonteinen lambic, 75% Lindemans)."

Season 19/20 Assemblage #16. Bottled on 08/01/20. "For this specific Oude Kriek, we macerated sour cherries for seven months on stainless steel. The lambikken that were used originate from five different barrels and five different brews. The final fruit intensity is 334 grams of sour cherries per litre of Oude Kriek. 100% 3 Fonteinen."

Season 19/20 Assemblage #13. Bottled on 17/12/19. "For this Oude Kriek, we macerated whole sour cherries on one- and almost-two-year old lambik in stainless steel. The maceration lasted for 5,5 months. The lambikken that we used for macerating and blending originate from three different barrels and four different brews. The final fruit intensity is 346 grams of sour cherries per litre of Oude Kriek. 100% 3 Fonteinen."
