Malt-Port sweetness of Port combined with the complexity of beer. 3 year Barrel Aegd.

Peach Mead made with peaches from Masumoto Family Farms forzen with liquid Notrogen and then aged Bourbon barrels for 4 months.

1/3 Cabernet pyment, 2/3 mead with Belgian dark candi syrup, cocoa nibs, and dates.

The light red "Valantine" rhubarb is harvested in the spring. It is used for wine and now also for fermentation with lambic in wooden barrels. 45KG of fruit for 100 liters of young lambic.

Farmhouse cider made with Jonagold, Boskoop and Sterappel/reinette étoilée aged for two months in Whiskey barrels.

BA blond sour beer (Zure van Tildonk) aged with sour cherries and then aged six more months in Whiskey barrels from Brouwerij Het Anker.

Pastry Sour brewed with cherries and lactose.

Assemblage #118. Bottled on 17/10/2019. This specific Intens Rood has macerated for almost 6 months on an oak barrel. One- and two-year old lambics from three different barrels and eight different brews were used. Final fruit intensity is 498 grams of sour cherries per liter of Intens Rood. 100% 3 Fonteinen

Season 18/19 Assemblage #106. Bottled on 30/08/19. This particular Hommage has a final fruit intensity of 352 grams of fruit per liter of Hommage. The lambics originate from 4 different barrels and 4 different brews. Lambics originate from 3 Fonteinen (40%) and Brouwerij Lindemans (60%).

"This Oude Geuze consists of a blend of 1 and 3 year old lambic, that was aged on two special oak foeders which were originally used before by a French producer of a famous white bubbly wine. We aren't allowed to mention its name, but you’ll definitely taste what we’re talking about. We really treasure our yearly collaboration with Boon, because it allows us to push boundaries and play around with a very traditional beer style together with some of the most skilled lambic producers in the world."

Amber Foeder aged sour ale

"This Autumnal sour blend is drawn entirely from beer aged and re-fermented in red wine barrels, showing beautiful mature grape character. Expect citrus and berry aromas, rustic sweet barley, fresh stone fruits, balancing acidity and drying oak tannins. "

"Locuste is the barrel aged version of our sour gruit : Criquet. It stayed for several month in white wine barrels which, with the conjugated efforts of the wild yeast we added, mellowed the base beer and gave it more complexity"

Lambic matured with Cassis (Black Currant). Around 300 grams of fruit per liter of lambic.

"Fresh out of barrel the beer is full of chocolate notes, which Haunted House elevates further with cacao husks. These husks add some light milk chocolate notes, making sure everything stays drinkable through different dimensions of sweetness, with toasted coconut chips joining in creamy harmony in a sequence of sensations. There’s a lot going on here, but the strength of the beer is up to the task of allowing this beer to excite and delight with each sip."

"Fresh out of barrel the beer already has a depth of coffee and chocolate flavour. Waltzer amps these notes up and spins them around with the addition of our own rum barrel aged coffee beans, a collaborative project with Quarter Horse roasters. This accentuates the boozy tones of the beer with some rum character while adding a resonant coffee hit. Complexity of acidity, biscuity notes, cherries and dried fruits all begins to swirl with the heady overtones of the base beer in an intoxicating treat"
