"BEHIND THIS BEER
While sampling stouts from our barrel storage, we came across a handful of bourbon barrels that were perfectly ripe for the picking. Full of the expected aromas of rich chocolate fudge, sweet vanilla, caramelized sugar, toasted oak, warming whiskey and umami notes, but with a very distinct coconut aroma topping it all off. We decided to amplify this coconut vibe just a touch without overshadowing the original character of both the barrel aging and the stout itself.

TASTING NOTES
Rich, velvety, boozy, chocolate fudge, warm vanilla, hint of dark miso and toasted coconut.

The combination of old-school and new-school hop aromas is very prominent. A light appearance, everything in balance, 14g/l of aroma hops, yet nothing about this beer is overdone. Driven by the ongoing quest for the perfect IPA, we’ve crafted this super-crisp, bitter, crystal-clear IPA. A modern profile with a nose full of grapefruit, peach, pine resin, a hint of cannabis and diesel. The quest will never end, beer by beer, IPA by IPA!"

Enter the Dragon III follows the same approach as its predecessors. Lambic aged between one and two years macerated on Gorsem cherries for six months before spending an additional three months ageing in oak.
The final blend is finished with a small addition of fresh wort and a generous amount of fresh rosemary harvested from a friend's garden."

"The 'M' edition combines two different Mandorla-aged lambics.
The first is the same almond barrel-aged lambic featured in the 'P' blend. The second is the final portion of our Mirabelle lambic, produced with 2024 fruit and 2023 lambic, and matured for more than a year in another Mandorla barrel.
Both beers contribute equally to the final blend. Carbonation has intentionally been kept lower to allow the barrel character to express itself more fully."
