T.WO. aka Totally Wiped Out. Wheat Ale aged for 4 years in Tres Hombres rum barrels. BBD is passed and lable might be a bit damaged due to long cellaring.

"De Dulle Teve is brewed in the tradition of a Belgian Triple. Its high density stems from large amounts of pale malt increased with pale candi sugar in the brew kettle. Unfiltered, unpasteurized, bottle-conditioned. De Dulle Teve keeps two to three years without major changes in taste. Further maturing, up to 10 years, will cause it to darken a little and lose some of its bitterness. The bittering of about 30 IBU is due to Goldings hops in the brew kettle."

"Bière de Garde is a blend of three barrels from three contrasting brews produced in January, July and October 2018. The blend produced an easy drinking, dry, malt-forward beer with balancing bitterness and funk. The bottle fermentation included a phase led by lactic acid bacteria, known as 'sickness', which produces extra weight and fullness to the mouthfeel. Bottled in November 2019, the beer was effectively lagered in bottle at cold ambient temperatures over winter, before completing maturation in the early summer months of 2020."

"This Autumnal sour blend is drawn entirely from beer aged and re-fermented in red wine barrels, showing beautiful mature grape character. Expect citrus and berry aromas, rustic sweet barley, fresh stone fruits, balancing acidity and drying oak tannins. "

"You know our Bruxellensis, a complex beer brewed with an indigenous Brussels yeast that we found in the "wild" nature of Saint-Gilles: the famous Brettanomyces Bruxellensis. We have made a version of this beer that has been able to mature for several months in old red wine barrels: the BRUXELLENSIS RESERVA. The result is a flavorful festival of red and black berries: wild strawberries, candied cherries, blackberries and blueberries. It has some woody notes of course, and the Brett adds not only fruity notes, but also accents of old leather. The aftertaste is dry with a delicious bitterness. A wine-like and complex beer that is at the same time very refreshing and easy to drink."

Hopped with our very best German Tettnanger and Hersbrucker hops. Fermented first in steel tanks and then rested for a year in second use Bourbon barrel that previously contained one of our lovely Baltic porters.
