"Brassin refroidi en coolship lors d'une nuit de novembre 2019. L'assemblage est constitué à 20% de bière spontanée et de fermentation mixte d'une sélection de levures. Trois ans d'élevage en barrique de Chablis, sémillon et vin rouge sont ensuite venus la sublimer."

"A mixed fermentation sour brewed in collaboration with Nevel Wild Ales from the Netherlands. This Norwegian sour was brewed with locally foraged juniper and fermented with Kveik yeast, then aged in a Foeder for 18 months with our house mix culture. The result is a nuanced mixed fermentation sour with bright acidity, citrus fruits and wild funk."

"IN collaboration witg Domaine Achiillée from Alsace, we macerated their damson plus with our young and old lambics. The blend underwent a six-month maceration."

Season 2022-2023, Assemblage #72. Bottled on 01/06/2023. "Tuesday 30th of May 2023, 6AM in the middle of our fields in Lot. The 3 Fonteinen team was hanging in the elderberry trees to pick its blossoms. Immediately after we put this higly aromatic and perfumy flowers on four-year-old lambik for a two-day maceration. We blended with more three-year-old lambik before bottling. The weighted average age of this blend upon bottling was more than 38 months. The lambikken originated from two different wooden barrels and seven different brews." Bottle count: 760.

The 2 macerations were done alternately to better determine the taste of the blend before bottling"

Elderflower infused lambic

Season 2022-2023 Assemblage #58. Bottled on 23/03/2023. "For this Oude Geuze, we blended not less than four barrels with lambikken originating from ten different brews. The featured lambikken were young, two, three and more than five years old. This brings the weighted average age of the blend to more than 32 months on the moment of bottling, and more than 56 month on the moment of the release. Of the 3 Fonteinen brewed lambikken - making up more than 60% of the blend, more than 60% of these were brewed with local barley and wheat, all coming form organic farmers in Pajottenland."

Sherry Finish is a beer aged for a year in one of the Popihn brewery 's foudres, which were then transferred to two Sherry barrels for further aging.
