Season 2019-2020 Assemblage #56. bottled on 26/11/2019. "For this specific blend of Cuvée Armand & Gaston, we blended lambikken originating from seven different barrels and from eight different brews. Almost 40% of this blend are oude lambikken. The bottle aged for more than two years in our cellars before release, bringing the weighted average age of the blend up to more than 43 months. While blending, we added summer honey, harvested from our own bee hives."

Season 2020-2021. Assemblage n°32. Bottled on 03/03/2021. "For this specific Oude Geuze Golden Blend, we blended lambikken from three different barrels and five different brews. The brew consists of more than one third of 50-month old lambik. We also added one sherry barrel of 34-month old lambik. This way, the weighted average age of the blend upon bottling is 28 months. About one third of the 3 Fonteinen lambik was brewed with Pajot grown cereals. This is the same blend as the 31st, but with a different sherry barrel."

Season 2020-2021. Assemblage n°33. Bottled on 09/03/2021. "A Golden Blend with both young lambik and a good portion of two-year and four-year old lambik. This blend consists of lambikken of seven different brews and four different barrels, and 75% of the lambikken have been brewed by us. More than 20% of the heirloom cereals used in the 3 Fonteinen brewed lambik, was sourced in Pajottenland. The weighted average age of the blend was 25 months upon bottling. This blend features the same lambikken as blend 34, except one and with different proportions."

Season 2020-2021. Assemblage n°34. Bottled on 10/03/2021. "A Golden Blend with both young lambik and a good portion of two-year and four-year old lambik. This blend consists of lambikken of seven different brews and four different barrels, and almost 70% of the lambikken have been brewed by us. Almost 10% of the heirloom cereals used in the 3 Fonteinen brewed lambik, was sourced in Pajottenland. The weighted average age of the blend was 27 months upon bottling. This blend features the same lambikken as blend 33, except one and with different proportions (and in a smaller batch)."

Season 2020-2021. Assemblage n°35. Bottled on 10/03/2021. "This specific Oude Geuze Golden Blend only features one-and-a-half-year old and four-year old lambikken, but with the latter at 33% instead of the usual 25%. The oldest lambik was brewed on the 24th of January 2017 (so almost 50 months old). This way, the weighted average age of the blend amounts up to a tad more than 27 months. While blending, we added some honey from our own bee hives in Lot. The lambikken originate from three different brews and two different barrels."

Season 2020-2021. Assemblage n°42. Bottled on 08/04/2021. "This Platinum Blend is a blend of jonge lambikken and four-year oude lambikken only, originating from four different brews and two different barrels. One quarter of the blend consists of lambikken brewed with our own sourced heirloom cereals from different spots in Brabant."

Season 2020-2021. Assemblage n°40. Bottled on 01/04/2021. "This Platinum Blend is a blend of jonge lambikken and four-year old oude lambikken only, originating from six different brews and two different barrels. One quarter of the blend consists of lambikken brewed with our own sourced cereals from different fields in Brabant. The weighted average age of the blend is a good 21 months, and the oldest lambik was brewed at the beginning of 2017. We added some local honey from our own beehives to the blend. 100% 3 Fonteinen brewed lambik."

Season 2020-2021. Assemblage n°41. Bottled on 07/04/2021. "This Platinum Blend is a blend of both jonge lambikken, two-year and four-year oude lambikken, originating from eight different brews and four different barrels. One fifth of the blend consists of lambikken brewed with our own sourced heirloom cereals from different spots in Brabant. The weighted average age of this blend is about 25 months, and the oldest lambik was brewed beginning of 2017. With one brew, we used a local hop variety that we are trying to revive, called Groene Bel. 100% 3 Fonteinen brewed lambik."

Season 19/20 Assemblage #76. bottled on 16/09/2020. "For this specific Oude Kriek, we macerated sour cherries for more than eleven months on two-year old lambik and in a single oak foeder. The lambikken for maceration and blending originate from three barrels and six different brews. 100% 3 Fonteinen brewed lambik."

Season 2019-2020 Assemblage #46. Bottled on 20/02/2020. "This Oude Kriek is typified by a long maceration of six and a half months on oak barrels. While most of the sour cherries were macerated on toasted oak, we decided to blend these to an Oude Kriek rather than a Robijn as we deemed the toast characteristics are more subtle. We used five different lambikken from seven different brews. We let this Oude Kriek, with a 32% fruit intensity, settle for well over a year before releasing it. This way, the weighted average age of this bottle is well over 30 months when released."

Season 2019-2020 Assemblage #81. Bottled on 15/10/2020. "For this Oude Kriek, we macerated sour cherries for almost nine months on two-year old lambik. We blended with some jonge lambik before bottling. The final fruit intensity amounts up to 375 grams of sour cherries per litre of Oude Kriek. With more than a year of bottle conditioning, the weighted average age of this blend will range around 30 months upon release. While blending, we added some local honey. 100% 3 Fonteinen brewed lambik."

Hopped with Sabro. Honey is added during the boil.

Berliner with sour cherries and mint

Berliner aged in Marsala barrels.

Morpheus Saison fermented with Brett and aged in Vermouth barrels.

Phi (Blond Sour) aged with rhubabrb and then dry hopped with Amarillo hops.

Blond sour aged in Rum, Cognac, PX & Bourbon barrels.

Barrel aged golden sour ale, with raspberries and limes.

Apricot lambic made with apricots from South Tyrol.

Apricot lambic made with apricots from South Tyrol.

Raspberry Lambic made with 1000 kg of Rubus idaeus "Fallgold" raspberries matured in 1500 liters of lambic.

Quince lambic obtained by maturing1000 kg fresh local quince (Cydonia Oblonga) on 1500 liters of lambic for more than a year.

Vintage 2020. Fruit Lambiek so it does not foam in order to fully taste the fruit aromas. 1000 kg of whole Mirabelle are fermented over a year with 1500 liters of young lambic. With further maturation in oak barrels.

Collaboration brewed with some nice spices brought directly from Chili by the brewers of Granizo.
