    "Although its name suggests otherwise, the szechuan pepper is not a real pepper, but a distant cousin of the citrus fruit. For this beer, the red version was used, which has a slightly fruitier flavour than the green and provides a slight tingling effect on the aftertaste. Other than that, citrus aromas and a certain spiciness emerge. The refermentation in the bottle provides the necessary minerality and balance, so the presence of the szechuan pepper is not overwhelming."

    "A real thirst quencher, Lambic with rhubarb! The fresh rhubarb comes from a local organic farm and macerates on the lambic for 3 to 4 months. The rhubarb dissolves in the lambic and all of the delicious juice of the rhubarb is incorporated in the lambic. The rhubarb lambic is then bottled and a re-fermentation takes place. The result is a pleasantly sour beer, in which the flavour of the rhubarb really shines through."

    "To create the Roasted Oolong Tea Sparkling Infused Lambic, one-year-old Lambic was infused with roasted Oolong tea for about four weeks. This tea, especially popular in Asia, is slightly oxidised and was then roasted in the traditional way. This results in a rich flavour, with a certain spiciness and some toasted notes. Thanks to the re-fermentation in the bottle, these flavours blend into one harmonious whole."

    "Oud Beersel’s Witte Lambiek Sparkling Infused Lambic takes its inspiration from traditional Belgian wheat beers: these are characterised by the addition of coriander seeds and bitter orange peel. The same thing was done here: both ingredients were macerated on one-year-old lambic for several weeks to obtain that typical, citrusy flavour, which is further highlighted thanks to the acidity of the lambic. The spiciness of the coriander is present in the aftertaste, but does not dominate. Thanks to the refermentation in the bottle, the result is a beautiful beer with traditional flavours, yet just that little bit different."

    Season 2021-2022. Assemblage n°57. Bottled on 31/03/2022. "For this Oude Geuze Platinum Blend, we blended lambikken originating from four different barrels and nine different brews. We used one- two- and four-year old lambikken, in a 27/30/43 proportion and finished the blend with some freshly brewed wort. This way, the weighted average age of this bottle, upon bottling, clocks at to more than 30 months. Add to that at least a full year of bottle conditioning, and it will have reached a weighted age of more than 42 months. Almost 40% of the blend consists of lambikken brewed with grains form our own Cereal Collective."

    Season 2021-2022 Assemblage #29. Bottled on 10/02/2022. "For this Oude Kriek, we macerated sour cherries for more than nine months in stainless steel. We used both two- and three-year old lambikken for both macerating and blending, originating from four different barrels and ten different brews. The weighted average age is almost 26 months, and the final fruit intensity clocks in at 319 grams of sour cherries per litre of Kriek."

"For this specific Oude Geuze, we blended lambikken from three different barrels and six different brews, brewed by both Brouwerij Lindemans (33%) and ourselves (67%). More than half of the lambikken were two-year and three-year lambikken, rendering the weighted average age of the blend upon bottling to more than 22 months. All cereals used with the 3 Fonteinen brews were sourced in our own Cereal Collective."

    Season 2022-2023, Assemblage #26. Bottled on 12/01/2023. "For this Wijnbergperzik, we macerated vineyard peaches for about four months on three- and four-year old lambik. Two thirds of the lambikken have been brewed by Brouwerij 3 Fonteinen, one third by Lindemans. The oldest lambik has been brewed in October 2019. This renders the weighted average age to more than 33 months. The final fruit proportion is 388 grams of Moesel-grown and hand-picked peaches per litre of Wijnbergperzik."

    Season 2022-2023 Assemblage #38. Bottled on 31/01/2023. "For this first ever fully organic grape lambik, we macerated Grüner Veltliner grapes on one- and two-year old lambik. The grapes were sourced from Christoph Hoch, a Demeter-certified wine maker from Hollenburg an der Donau, Austria. Total maceration time was almost five months and the weighted average age of this blend was more than 19 months upon bottling. The final fruit intensity is 406 grams of whole grapes per litre of finished Druif. All cereals we used in brewing the seven different lambikken, were sourced with local Pajot farmers."

Total maceration time was five months and the weighted average age of this blend was more than 33 months at bottling. The final fruit intensity is 389 grams of whole grapes per litre of finished Druif. A few years ago, we started working with the most progressive low-intervention winemakers around Europe. Christoph Hoch is a Demeter-certified wine maker from Hollenburg an der Donau, Austria. He is not only crazy about our lambik, he also has some of it ageing in his own barrel cellar!"

We used two- and three-year lambikken only, rendering the weighted average age of this blend to more than 26 months. The final fruit intensity clocks at more than 584 grams of grapes per litre. Almost 80% of the cereals for the five brews were sourced with our local farmers. A few years ago, we started working with the most progressive low-intervention winemakers around Europe. Harth+Harth is a family-owned Demeter-certified organic winery from Saulheim in the German wine region of Rheinhessen.!"

"For this specific Oude Geuze Golden Blend, we used lambikken from three different barrels and five different brews, and two different brewers. More than one third of the lambikken used is more than 48 months old, rendering the weighted average of the blend to more than 26 months. The oldest lambik was a 3 Fonteinen lambik brewed in the first days of 2018. Of the 3 Fonteinen brewed lambikken, almost half were brewed with Pajottenland sourced grains from our own cereal circle. And of the hops used in our brews, one third is of Belgian origin, and the average age was more than 15 years."

We used both one-, two-, three- and four year old lambikken, clocking the weighted average age of the blend upon bottling at more than two years, or 24 months. The oldes lambik was brewed in the first days of 2018. More than 40% of the combined grain bill was sourced in Pajottenland, with our own cereal circle. Also more than 40% of the combined hops were sourced in Belgium, with an average of 14 years of age."

The maceration took more than seven months. The lambikken in this bottle originate from two different barrels and three different brews. The weighted average age of this blend upon bottling is eighteen months. A small portion of the lambik was brewed with Belgian grown cereals. The final fruit intensity is 353 grams of fruit per litre of Druif."

    "In the past Port wine was shipped to the harbours of Bruges and Antwerp on wooden barrels of 650 liters, called ‘pipes’ or ‘pijpen’ in Dutch. Some of these barrels were purchased by Lambic breweries and have contained Lambic for many generations. Some barrels have been circulating in other, some defunct, Lambic breweries before finding their final place in the barrel cellars of Oud Beersel. We have blended the finest Lambics of on average 20 months old matured on these ‘old pipes’ of between 60 and 120 years old, to create an Oude Geuze with the characteristics of these old barrels."

    Magnum. "The Gueuze Tilquin à l’ancienne (7.0% alc / vol) is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is tart and dry but has a certain roundness that makes this Gueuze à l’ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose."
