Tilquin Oude Gueuze 2022-2023
€13.79"The Gueuze Tilquin à l’ancienne (7.0% alc / vol) is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is tart and dry but has a certain roundness that makes this Gueuze à l’ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose."

Boon Gueuze Mariage Parfait...
€11.37"Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime." -

Almost 40% of the lambikken used were three-year and four-year old lambikken, rendering the weighted average age of the geuze blend to more than 23 months on the moment of bottling. More than 65% of the cereals used during brewing were sourced in our Cereal Collective."

€43.95Season 2023-2024 Assemblage #54. Bottled on 18/06/2024. "For this classic version of the Zenne Y Frontera Blend 54, we blended not less than fice different barrels of sherry aged lambik. The barrels are a mix of very old Oloroso and Amontillado barrels from two small family bodegas. Bodega Joséfa Perez is located in the hearth of Jerez de la Frontera and Gutiérrez Colosia is locted at El Puerto De Santa Maria. We aged more-than-three-year-old lambikken for an additional year on these sherry casks. consequently, the weighted average age of this blend is over 50 months."

"For this classic version of the Zenne Y Frontera Blend 55, we blended all of our Josefa Perez Barrels. this tiny bodega in the heart of Jerez de la Frontera inspired a lot of the other independent and family owned bodegas through their high quality and steadfast vision. this blend consists of lambik aged on four oloroso barrels and two amontillado barrels.we matured three-and-a-half-year and older lambik for anothereleven months on these sherry barrels. consequently the weighted average age of this blend is over 50 months."

The featured lambikken were young, two, three and more than five years old. This brings the weighted average age of the blend to more than 32 months on the moment of bottling, and more than 56 month on the moment of the release. Of the 3 Fonteinen brewed lambikken - making up more than 60% of the blend, more than 60% of these were brewed with local barley and wheat, all coming form organic farmers in Pajottenland."

Tilquin Meerts 2022-2023...
€21.55The Meerts Tilquin series was made by fermenting fruit that had already been used once. The fruit was fermented for a period of 4 months in a blend of 80% 1 year old Meerts and 20% of a blend of different 2 year old lambics. Meerts (or March Beer) is a low strength lambic, which was originally produced with the weaker wort obtained from the rinsing of the grains. Unfiltered and unpasteurized, they are refermented in the bottle. There are 4 bottles with 4 different fruits: Mourvèdre, Viognier, Gewurztraminer & Pêche Jaune

"For this organic Druif, we blended three different grape lambikken, based on three typical grapes of the Languedoc: Carignan (20%), Grenache Noir (40%) and Syrah (40%). All grapes were picked at Domaine La Baronne. André and Suzette Lignères aim is to create intense yet balanced wines, safeguarding the biodiversity in their vineyards through low yields and biodynamic treatment of their vines. We applied a cold maceration on both the Carignan and Grenache grapes before continuing maceration on young lambik for a period of more than five months. All macerations happened on oak barrels. We blended with three-year old lambik, clocking the weighted average age of this grape lambik to more than 23 months. The final fruit proportion of the blend is 352 grams of grapes per litre of Druif. All grains of the 16 brews were sourced within our cereal collective and are all organic. 100% 3 Fonteinen."

€27.25Season 2023-2024 Assemblage #37. Bottled on 09/04/2024. Bottle Count 1824. "For this Druif, we macerated organic Roussanne grapes from Domaine La Baronne. This winery is situated in Corbières in Languedoc, in between Carcassonne and Narbonne. André and Suzette Lignères aim is to create intense yet balanced wines, safeguarding the biodiversity in their vineyards through low yields and biodynamic treatment of their vines. We macerated the full Roussanne grapes for more than eight months in an oak barrel. We then blended with some more four-year old lambik. The four-year old proportion makes up more than 60% of this fine grape lambik blend. The weighted average age upon bottling is therefore more than 31 months. The final fruit proportion is 307 grams of grapes per litre of Druif. 100% 3 Fonteinen."
