  • Pellicle Vergistingen Oxaal...

    €65.20

Pack Containing 2 bottles from Pellicle: Oxaal Kriek ("One of our earliest blends was a sparkling full rhubarb wine. For some reason we stopped making this type of wine. However we still had 2 barrels we made back in 2022. In the year after that we blended the wine with skins of our beloved Gorsem cherries. After 1 year of ageing, we decided to bottle it and leave them for another year. A sparkling fruit pet nat if you will, with aside from rhubarb and cherry, notes of roses, almond and cinammon.") and Mira d'Or Omija ("A lambic blend containing 1, 2 and 3 year old lambic from 5 different breweries. On our search for the best fruit, we went to the Elzas region for fully ripe mirabelle plums. The region of Lorraine is famous for it, which is why we decided to buy handpicked biologically grown fruit from there. After a semi-carbonic maceration of 2 months, we added the 1 to 3 year old lambic to the fruit. After refermentation was done, we took the mirabelle lambic, backblended with some more young lambic. To this particular blend we also added a lambic on which Omija or 5 flavor berry was macerated. As the name suggests, it gives the 5 base flavors we can perceive: sour, sweet, salty, bitter & umami. It has notes of rosehip, pepper and citrus.")

  • Pellicle Vergistingen Ultra...

    €65.20

Pack Containing 2 bottles from Pellicle: Ultra Violet ("We are big red beetroot fans. We also realize it's a an acquired taste for some people. To make this blend as accessible as possible, we started by making a 100% red beetroot wine one year ago. We then went looking for the perfect barrels of cider to accompany this beetroot wine with it. The final result has a wicked red/purple color & a nice fizz. It boasts red beetroot, cassis and wine.") and Mira d'Or Vanilla ("A lambic blend containing 1, 2 and 3 year old lambic from 5 different breweries. To this particular blend we also added fresh vanilla beans. As Mexico is the country where vanilla originated from, we took some of the best and freshest vanilla beans home during our holiday on the Yucatàn peninsula last year.")

  • De la Senne / Cantillon...

    €3.41

"This beer—created for the 25th birthday of Cantillon’s Quintessence—uses an ancient and typically Belgian technique called ‘coupage’: the blend of a sour beer with a young ale. The sour beer we used is 2-year-old Lambic from Cantillon. The result is a 6.2% abv amber beer, with an appealing tartness and a deep, complex vinous character."

Since its construction in 1871, it has meant a great deal to the farm, and since 2021, the lambics for this unique Oude Geuze have been ripening here. • Boerenerf Mus'iek 2024

    €23.25

"A harmonious blend of our traditional krieken lambic with a natural wine made from Muscat Bleu from Wijndomein Hoenshof. The Muscat grapes underwent a three-day cold maceration, followed by gentle pressing, spontaneous fermentation, and aging in cuve. The result is an elegant interplay of subtle spiciness and a vinous, fruity depth."

  • Boerenerf Pineau Des Charentes

    €25.00

"This Gueuze has undergone an additional year of barrel aging in old oxidative Pineau des Charentes casks. This long oxidative process creates barrels with a unique complexity, where lambic finds its perfect home."

  • Tilquin Oude Gueuze 2022-2023

    €14.47

"The Gueuze Tilquin à l’ancienne (7.0% alc / vol) is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is tart and dry but has a certain roundness that makes this Gueuze à l’ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose."

"Mixed Fermentation Golden Sour with Scottish Blackberries. Blended from four batches of golden sour beers all primary fermented with different Brettanomyces strains and brewed with locally grown malted barley, wheat and oats. This blend has an average age of four months and provides bright tropical, stone fruit and red berry aromatics. We conditioned this blended beer on 220g/l of locally grown Scottish blackberries (aka brambles). The resulting beer has an intense red/purple hue, and aromas of a tropical berry fruit medley. We get sweet/sour tangy, hedgerow berries, guava, jammy raspberries and some light tannin from the berry skins."

  • Holy Goat Crimson Curse

    €9.21

"This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples."
