    : 3

"Oude Geuze Boon Black Label Edition N°7 brings us back the typical long, dry aftertaste, yet very full-bodied taste that we are used to from Boon Black Label. With a very fresh citrus note and pleasant sparkle you can enjoy the Boon Black Label N° 7 as an elegant, easily drinkable tender Oude Geuze. This Edition N°7 was bottled on June 8, 2021. The blend is a mixture of lambic matured in oak barrels for one, two and three years. The Oude Geuze Boon Black Label Edition N °7 is a perfect aperitif beer. It is certainly also an ideal gueuze to enjoy with patience. It goes perfectly with fish dishes, such as combinations with oysters, salmon or mussels."

  • 3 Fonteinen Doesjel 19/20...

    €14.17
    : 3

Season 2019-2020. Assemblage #85. Bottled on . on "This Doesjel was bottled on the 1st of December of 2020 and was intended to be an Oude Geuze. Because of the high proportion of older lambikken, the fermentation did not continue in the bottle and the blended lambik beer remained flat. The yeast dozed in, hence the name – a local dialect for that typical little sleepy knock you get over noon. In return, with a natural-white-wine-like aroma and malty citrussy taste, the resulting beer is a subtle lambik blend, with a weighted average age of about 30 months upon its release. The oldest lambikken were brewed at the beginning of 2018. This is the first Doesjel in 75cl bottles since 2006."

  • 3 Fonteinen Druif -...

    €28.71

Season 2020-2021 Assemblage #27. Bottled on 11/02/2021. "For this, Druif, we co-fermented Belgian Dornfelder with one- and two-year old lambik in a 53/47 cut. We used the freshly pressed and shortly skin-macerated juice and put the unfermented juice with young lambik for continued fermentation in stainless steel. Afterwards, we blended with two-year old lambik. All lambikken originate from seven different barrels and seven different brews. The final fruit intensity is 31.6%."

  • 3 Fonteinen Druif / Kriek -...

    €28.71

Season 2020-2021 Assemblage #26. Bottled on 10/02/2021. "For this Druif/Kriek, we blended a Belgian dornfelder druivenlambik and a kriekenlambik in a 50/50 proportion. We used both young and two-year old lambikken, originating from nine different barrels and nine different brews. The combined maceration took eight months and the final fruit intensity is 510 grams per litre of sour cherries and freshly pressed, skin-macerated grape juice."

  • 3 Fonteinen Oude Geuze...

    €15.67

Season 2020-2021 Assemblage #43. Bottled on 20/04/2021. "In the spring of 2020, we bottled a Golden Blend (season 19|20 No. 40), containing lambikken from four different barrels and six different brews with three different breweries. Fifteen months of cellar conditioning and ageing later, this geuze blend appeared not to have carbonated. A part of the bottles was therefore opened again and was re-blended with both two potent jonge lambikken and 50-month oude lambikken - all 3 Fonteinen - to give the Golden Blend a second push to bottle carbonation and additional depth. This way, the weighted average age of this blend currently is at more than 36 months, with the oude lambik being brewed at the beginning of 2016."

  • 3 Fonteinen Oude Kriek...

    €28.83

Season 2019-2020. Assemblage #79. Bottled on 07/10/2020. "While looking for old sherry barrels, we cannot get lucky all the time. While we will be sourcing barrels directly from bodegas to assure provenance and quality, we had a batch of Pedro Ximenez (PX) barrels that was on the peated side (albeit subdued). As a result, we decided not to use them for Zenne y Frontera, but to blend them with other (fruit) lambikken into geuze and fruit blends. This is the first of such blends to be released. Sour cherries were macerated partly on young peated lambik and partly on two-year old straight lambik in a stainless steel tank. We blended with young and three-year old (!) lambik. 55% of the blend is old lambik and the final fruit intensity is 567 grams of sour cherries per litre."

  • 3 Fonteinen OG Armand &...

    €22.92
    : 2

Season 2020-2021. Assemblage #17 bottled on 20/01/2021. "This Cuvée Armand & Gaston has been blended with lambikken from four different barrels and originating from four different brews. Twenty percent of the cereals that we used for brewing the young lambik, were sourced in Brabant through our own farmers’ network. The old lambik that we used — brewed in the first days of 2018 — comes from two small 400-litre barrels that we found to be gently oxidative. The weighted average age of this blend upon bottling was eighteen months.."

Now cherish the cherries and be mezmerized in the moment!"

  • Mills Still

    €25.91

"Still is a single barrel bottling of four year old beer, brewed in March 2018. We have been hoping to find a barrel that would have enough character and bite to exist without the need for carbonation. The wort was made using a turbid mash and underwent an extended boil with large quantities of aged hops. After two nights in our coolship, the wort was transferred to a single 500 litre barrel for four years of fermentation and maturation. The resulting beer was bottled still, without the addition of sugar to produce a refermentation. It has a significant richness for the abv, balanced by a striking hop bitterness, and lingering tannin from the four years in oak."

  • Fair Isle Adelaide

    €36.69

    "A Farmhouse Adambier.
Adelaide is our take on an adambier, an old world style ale. Aged in oak for one year, Adelaide is dry with notes of chocolate, stone fruits and a hint of smoke.
Born out of a recipe from our homebrewing days, Adelaide is our take on recreating the oft overlooked Adambier style. Hailing from the era of pre-industrialized malting processes, these strong ales exhibited a smoke-forward profile from the use of wood-fired kilns and were usually aged for an extended period in wood.
We started with a robust grist of Munich, Vienna, and Chocolate malts alongside the star of the show: Beechwood Smoked Barley. This ingredient allowed us to emulate that smoky aspect, while supporting a more rounded and rich malt base. Adelaide spent over a year in oak puncheons before the final blend.
Expect pronounced notes of caramel, toffee, warming undertones of Islay scotch, and of course an appropriate hit of acidity from our house culture. We’re pleased with how time imparted these complex flavors and aromas, and are eager to share the result with you."

  • de Garde Ivy

    €28.53

"Ivy is a beer made with 100% regionally grown pale malted barley. In the kettle, it sees both three to four-year aged whole leaf hops, as well as pellet hops from the most recent harvest. Both are grown here in Oregon. It is the most simple of our recipes, yet one of the most complex in expression. One malt, one hop, our wonderful local water, and time. Ivy spends two years in neutral wine puncheons. We choose from these barrels a blend that is funky, but not too funky. Tart, but not too sour. Complex, but still hedonistic. Really, a blend that we are happy to make, to blend, and ultimately to share, in celebration of our new home."

  • Wildflower Good as Gold

    €24.53
    : 4

"A 50/50 blend of barrel aged Gold with fresh Gold that has just completed primary fermentation. This composition of aged and fresh beer is what we had originally intended for our Gold. It didn't end up like that though, as Gold is 100% barrel aged. We love the fresh fermentation esters and bright hop character we get in our young fermentations. This is what we focus on in beers like The International & As It Were (coming in November). But we can't hide that we also love the apparent funk, creamy mouthfeel and complex fermentation flavours of aged beer. We dont think of this blend as being a best of both worlds, but more an attempt (and this is only the first one) to marry these flavours harmoniously. One of the beers that really got me thinking about making mixed culture beers at all was BFM v225. It was the first biere de coupage I tasted and still remains a little bit of a mountain for me. Good as Gold may be made in the same fashion as and with a lot of inspiration from v225 but has a distinctively Wildflower feel. "

    €41.95

"Timshel reflects our pursuit of flavors endemic to Monterey County & the Salinas Valley. Each winter we brew a select few batches of spontaneously fermented beer following the Méthode Traditionnelle guidelines combining malted barley, raw wheat, and aged hops to produce a rustic wort. This wort is naturally chilled overnight in our coolship and spontaneously fermented in oak barrels by native microflora. Timshel combines our favorite casks spanning the course three different vintages, blended together, refermented on local raspberries, and naturally refermented in bottle. From us to you, we present Timshel: Raspberry."
