"X Anniversary 3/10 WILD#29 Pine Ale - the third in a series of anniversary beers brewed in collaboration with friends from Hudson Valley. Brewed in April 2023, this beer was fermented with our blend of wild yeasts and bacteria. The base beer consists of a mix of Pilsner malt, wheat malt, and oat flakes. Pine shoots were added at several stages – during the whirlpool, during active fermentation, and right before bottling."

Season 2022-2023 Assemblage #53. Bottled on 07/03/2023. "For this Oude Geuze, we blended three different barrels of lambikken, originating from seven different brews, brewed by two different brewers. A blend of one- and three-year old lambikken, in a portion of respectively 55% and 45%. On the date of bottling, the weighted average age is therefor almost 26 months. The 3 Fonteinen lambikken make 75% of the blend, and 75% of this volume has been brewed with local wheat and barley. While bottling, we added a bit of honey to the blend."

"Fliärblome is our elderflower-infused Aoltbeer. The base is Münstersch Alt, which is the historic sour beer of our area. We foraged elderflowers next to the brewery and macerated the blossoms in the beer. The infused beer aged in oak barrels for 17 months. Notes of citrus, flowers and hay. Season 2023-2024 Assemblage #68. bottled on 26/09/2024. "For this Oude Geuze, we blended lambikken from three different brewers, six different brews and four different barrels. The ages the lambikken that we used for this blend range from young to more than four year old, accounting for almost 40% of the blend. The weighted average age of this blend at bottling is more than 28 months. Half of the lambikken were brewed by us and were fully crafted with local Pajottenland cereals. "

We blended the fruit lambics together with 2021 harvested riesling grapes from the Mosel in Germany that were barrel aged for 2 years."
