A Belgian style farmhouse tripel, brett, Morpheusyeast and a Vermouth barrel. That, time and that magic Alvinne juju. At Alvinne, we are storytellers, what a great story this beer tells.     Wild ale brewed last year with all breweries participating in Dok Brewing Festival. It has a malt base similar to the Brussels spontaneous cousins. The beer first underwent a clean fermentation in tank after which it was inoculated into white wine barrels with a mixed culture consisting of micro-organisms grown from bottles ofCantillon, Verzet, Nevel , Schneeeule and Tanker.

    Bottled on 27/02/20. "Strenge Winter – previously known under a slightly different name – is a special brew and blend. On January 19th 2018, we brewed a full barley malt beer wort, with pilsner, amber and munich malt (but no raw wheat). Whilst on the coolship, we added brown candi sugar. We left this beer to age for over two years on both barrels and small foeders. Prior to bottling, we blended the beer with some young 3 Fonteinen lambic and added a tad more candi sugar. This beer is brewed to Armand’s original recipe! (but #notlambic)."

    "Aoltbeer is the historic beer of Münster. The beers in this blend matured on average for 10 months in red wine barrels. In this time the beer devopped its fruity and wine-like character. For this small blend 01-2021 we have used cherries and sloeberries picked by ourselves as well as black currants from local organic farmer Maria Plage.

After we gently rack the young wine off of the macerating grape skins and stems, we transfer a blend of pre-fermented and aged beers, specifically chosen to match the grapes/wine that it will be paired with, followed by a period of one month for the residual sugar to finish fermenting and impart the character of the grapes into the beer.     "Spon - 2 Year Blend : This is a blend of 1 - 2 year old spontaneously fermented beer. Inspired by the Lambic tradition - brewed with a turbid mash, long boil, aged hops - then cooled overnight in our coolship where it was naturally inoculated with native wild yeast - bacteria. Following the overnight cooling, this inoculated liquid was filled into rinsed - steamed neutral oak wine barrels where the beauty of spontaneous fermentation evolved over the months - years. The beer in your glass is a true wild ale. Absolute terroir. We hope you enjoy it."

For this small batch no. 08-2021 we harvested organically grown Silvaner pomace from Franconia. After 2 months of maceration in the beer, we pressed the concoction and let it mature in barrels for another 5 months."

    "Barrel-aged wild blond beer with elderflower. Once a year we brew a special blend for Dauw. After initial fermentation, when sugars are still present, we infuse the beer for one day with freshly picked elderflower. This results in an overwhelmingly aromatic beer, which becomes more rounded after long barrel aging. By mixing 3 years of vintages, we bring a lot of complexity to the beer. The young barrels add bitterness and floral scents, whereas the older barrels add ripeness and soften the character. Dew is a nice sour beer with rich elderflower, green pepper and citrus. In its aftertaste you can find the soft bitterness and the long lasting tones of spring blossom aromas."

    "Barrel-aged wild ale with damson plums. Gekwetst is a winelike beer with an outspoken fruity character. This second batch contains four times the amount of fruit as the previous, with strong, juicy sour notes as a result. The nose has candy and stonefruit, while the finish is dry with a mild bitterness. Gekwetst was aged on a single barrel for 21 months, but its barrel character is very subtle, keeping full focus on the damsons. Highly recommended for people who enjoyed our beer Fabel."

    "Barrel-aged wild dark beer with mushrooms, collab with De Natte Gijt. Earthy, lightly sour and spicy beer that has aged on oak for 19 months. These mushrooms have been cooked along during the end of the cooking process to release their flavor. The dark base beer gives nicely complementary flavors of toasted bread and caramel. This beer has aged on oak for 19 months. The barrel aging has brought all flavors together. Zwam is a sour dark beer, with lots of savory umami notes from the mushrooms. Yet Zwam is surprisingly fresh with fruity notes due to the long maturation. Autumn in your glass! Ideally suited to drink with a rich mushroom stove or in front of the fireplace after a day of mushroom hunting."
