Season 18/19, Assemblage #66. bottled on 18/04/19. This specific Oude Kriek has macerated for 6 months with the cherries oak foeders. The lambics in this blend come from 7 different barrels and originating from 7 different brews from 3 Fonteinen. The final fruit intensity is of 356 grams of sour cherries per liter of Oude Kriek.

Dark sour ale (Sigma) aged for 6 months in red wine barrels.

"The story behind the name is amusing: Brewing in our very first brewery in Sint-Pieters-Leeuw was entirely manual and really exhausting. For lunch, we dreamed of a light and flavourful table beer to quench our thirst... One day, Bernard had the idea to mix a Taras Boulba with an equal amount of sparkling water to make a "small beer". A super refreshing beer that wouldn’t prevent us from getting back to work in full shape! And we decided to call it the "Petit Boulba"...We reused the name as a reminder of the early days, but of course we made the beer according to a specific recipe. Petit Boulba is a blond beer with only 2.8% alcohol, with a blonde and cloudy appearance due to the use of wheat and oats. Its aroma is very floral, with notes of fresh cereals. On the palate, these aromas develop further and blend with notes of white fruits and fine herbal touches. Petit Boulba is slightly bitter and has a very dry and super refreshing finish. As spring has been waiting so long to arrive, I guess we’ll just skip it entirely and go straight into summer!"

"Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers, brewed for Christmas. It has a very potent beer (12% alc/vol). It has been boiling for many hours, brewed with pale malt with white candy sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age."

GLUTEN FREE "Lumina is our shining light, a 4.2% Session IPA glowing with juicy tropical fruit notes. Hoppy aromas of mango and pineapple guide you towards explosive flavour, flashes of delicate citrus highlights and refreshing balanced bitterness. Our epiphany of a session beer drinks with a pillowy soft mouthfeel and pours with a beautiful light haze."

Season 2020-2021. Assemblage #67. Bottled on 28/07/2021. "The Cuvée Miel is a special version of the Cuvée Armand & Gaston. This geuze is a blend of one-, two-, three- and four-year old lambikken that have been infused with honey on the coolship. While blending, we added some more local honey. The weighted average age of this blend upon bottling was more than 24 months. 100% 3 Fonteinen brewed lambik."

Blond beer with fig juice

"A Scandinavian inspired Imperial Stout. Konrad’s is a smooth, supple stout with lots of chocolate and coffee flavor with a touch of licorice. At 70IBU there is more than enough bitterness to balance out the sweetness."

"The lambic in foeder n°31 aged for four and a half years before it became this Oude Geuze. It's typified by its fine carbonation and pleasant cognac-like nose. The fluent and mellow but strong aroma with hints apricots and walnuts is supported by a clear oak character. Brewed on 30 November 2015, bottlerd on 14 May 2020."

A blend of two varieties of cherries from Flemish fruit farmers. Fermented and matured in oak barrels

Blend of 70% sour ale (vieille provision) with lambic (from Girardin).

Season 19/20. Assemblage n°37. Bottled on 11/02/20. This Golden Blend has been blended with lambics from three different barrels and five different brews. The lambics were brewed by three different breweries. It is one of the first blends in which lambic brewed by Brouwerij De Troch in Wambeek was used. The oldest lambic was brewed in early 2016.

Phi aged in red wine barrels for approx 8 months.

Vintage 2021. Fruit Lambiek so it does not foam in order to fully taste the fruit aromas. 1000 kg of whole Mirabelle are fermented over a year with 1500 liters of young lambic. With further maturation in oak barrels.

American Pale Ale

This particular Hommage has macerated for 6 months with organic raspberries and cherries, and the final fruit intensity is 350 grams of fruit per litre. While blending, local honey was added.

Unblended 3 year old Lambic brewed in 2015.

Assemblage #83. Bottled on 13/06/2019. This specific Intens Rood has macerated for six months on its fruit. The lambic in this blend originate from two different barrels and two different brews. Final fruit intensity of 475 grams of sour cherries per liter of Intens Rood.
