The Oude Lambic comes from 2 different barrels and two different brews and represents around 40% of the blend. The oldest lambic was brewed on 12th January 2016. The average age of the lambis at bottling is 19 months.

Boon Gueuze Mariage Parfait...
€8.97"Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime." -

€11.49"This Oude Geuze consists of a blend of 1 and 3 year old lambic, that was aged on two special oak foeders which were originally used before by a French producer of a famous white bubbly wine. We aren't allowed to mention its name, but you’ll definitely taste what we’re talking about. We really treasure our yearly collaboration with Boon, because it allows us to push boundaries and play around with a very traditional beer style together with some of the most skilled lambic producers in the world."

Almost half of the blend consists of oude lambikken. This bottle has been aged for well over two full years in our own cellar, before being released."

The Demi-Muids at Oud Beersel , which were purchased in 2013, had previously held Chateauneuf-du-Pape and Bordeaux red wines for 9 years. Since making their way to Oud Beersel, these Demi-Muids have been exclusively used to age Lambic."

More than 40% of the blend consists of old lambikken, of which the oldest portion was brewed in the first days of 2018."

"For this particular geuze, we blended four lambics brewed by ourselves and one lambik from another, fairly new small traditional lambik brewery. The lambics originate from four different oak barrels. Three of the lambics used were between 25 and 27 months on the date of bottling. One of the two-year old lambics was brewed with the Witte van Vlaanderen wheat variety, and was cultivated in Pajottenland by our Cereal Collective."

€15.41Season 2021-2022. Assemblage n°57. Bottled on 31/03/2022. "For this Oude Geuze Platinum Blend, we blended lambikken originating from four different barrels and nine different brews. We used one- two- and four-year old lambikken, in a 27/30/43 proportion and finished the blend with some freshly brewed wort. This way, the weighted average age of this bottle, upon bottling, clocks at to more than 30 months. Add to that at least a full year of bottle conditioning, and it will have reached a weighted age of more than 42 months. Almost 40% of the blend consists of lambikken brewed with grains form our own Cereal Collective."
