It has been boiling for many hours, brewed with pale malt with white candy sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age."

"In March 2023, Joël brewed and inoculated 20hl of classic pilsner must at the Mule brewery. We transferred it to a foeder equipped with a cooling system to ensure true bottom fermentation. In September 2023 , we participated in the harvest of Brussels hops, and dry-hopped our pils with 100% Brussels hops. At the beginning of 2024, after 10 months of fermentation and maturation in foeder, we put it in bottles and kegs. After 2 months of natural refermentation, this beer is now finally available for tasting. The taste is marked by the lager yeast esters, the vegetal aromas of fresh hops, and of course the wild notes of the foeder."

"A 5.4% weizen with a whopping 70% wheat malt was brewed with one of our long-serving bartenders at Dok. Johannes (better known by his nickname Joeri) joined forces with Janos to make a weizen the way he would like it himself. Lots of wheat, Weihenstephaner yeast fermented cold, a decoction mash and a noble hopping with Tettnanger." BBD 04/2025

"The story behind the name is amusing: Brewing in our very first brewery in Sint-Pieters-Leeuw was entirely manual and really exhausting. For lunch, we dreamed of a light and flavourful table beer to quench our thirst... One day, Bernard had the idea to mix a Taras Boulba with an equal amount of sparkling water to make a "small beer". A super refreshing beer that wouldn’t prevent us from getting back to work in full shape! And we decided to call it the "Petit Boulba"...We reused the name as a reminder of the early days, but of course we made the beer according to a specific recipe. Petit Boulba is a blond beer with only 2.8% alcohol, with a blonde and cloudy appearance due to the use of wheat and oats. Its aroma is very floral, with notes of fresh cereals. On the palate, these aromas develop further and blend with notes of white fruits and fine herbal touches. Petit Boulba is slightly bitter and has a very dry and super refreshing finish. As spring has been waiting so long to arrive, I guess we’ll just skip it entirely and go straight into summer!"

Laag in bitterheid, maar bulkend van het Australisch hoparoma. Enigma, Vic Secret en Ella… Ja, ook aan de andere kant van onze aardbol groeien er heel interessante hopbellen. De Nieuw-Zeelanders bewezen het al in het verleden, maar de Australische terroir heeft duidelijk ook meer dan Galaxy alleen te bieden. Aangezien de mensen van Lucky Bay in Europa waren ter voorbereiding van de opstart van hun mouterij wouden we ook de nadruk leggen op lokale granen en lokale mouterijen. De rauwe gerst van Hof Ten Dormaal en pilsmout van Mouterij Dingemans vormden de basis voor deze super smooth Aussie pale ale."

"A beer we brewed with our friends from Canediguerra (IT). It is a blond, bottom-fermented beer, generously dry-hopped with New Zealand hops. The aromas offer a perfect balance of florals and exotic fruit. In the taste, we find passion fruit, kumquat, and green papaya, blended with an enchanting touch of exotic flowers. A light sulfur character, typical of bottom-fermentation yeasts, gives the beer its distinct personality. Canedisenne has a mild bitterness, balanced by a fruity sweetness in the finish."

"The 100PAP is a 6% alcohol Pale Ale type beer. It has a magnificent amber-copper color. On the nose, a delicious esters fermentation (banana, pear) flourishes as well as an exotic and spicy touch. On the palate, lovely malty aromas of caramel and crème brûlée bring its roundness, and are served with fruity (banana, apricot and lemon) and spicy notes where juniper and its finely minty side are mixed with coriander, and white pepper, all balanced with a slight bitterness. A generous beer, just like its partners !"

Saison van de Bruwer is a spelt Saison, dry-hopped and fermented with added Brettanomyces. It is blond, opalescent; its very persistent foam is creamy and fine. Very aromatic and fruity, its nose is reminiscent of pineapple, quince, apricot, and gooseberry. A ‘funky’ touch, typical of Brettanomyces, completes the picture. In the mouth these same flavors are intensified and accompanied by notes of cereals, a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter — typical character traits of the 1920s Saisons. bbd 18/11/2024
