Season 2022-2023 Assemblage #92. Bottled on 26/07/2023. "FFor this Oude Kriek, we macerated sour cherries for a full year and a few days on three-, four and five-year old lambik, before blending with some more three-year old lambik. As a result, the weighted average age of this blend clocks at more than 41 months. The final fruit intensity is 289 grams of sour cherries per litre of Kriek."

Season 2022-2023 Assemblage #8. Bottled on 17/11/2022. "For this Oude Geuze, we blended lambikken from three different barrels and six different brews, brewed by both Brouwerij Lindemans (38%) and ourselves (62%). More than two thirds of the lambikken were two-year and three-year lambikken, rendering the weighted average age of the blend upon bottling to moren than 24 months. All cereals used with the 3 Fonteinen brews were sourced in our own Cereal Collective."

"For this Oude specific Geuze, we blended lambikken from three different barrels and six different brews, brewed by both Brouwerij Lindemans (35%) and ourselves (65%). More than half of the lambikken were two-year and three-year lambikken, rendering the weighted average age of the blend upon bottling to moren than 22 months. All cereals used with the 3 Fonteinen brews were sourced in our own Cereal Collective."

Season 2022-2023 Assemblage #71. Bottled on 24/05/2023. "FFor this Druif, we macerated Merlot grapes of Claus Preisinger for more than eight months on three-and-a-half-year-old lambik. Afterwards, we blended with some more four-year-old lambik. We used lambikken originating from three different barrels and seven different brews. The weighted average age of this grape lambik is more than 44 months. The final fruit proportion is 380 grams of Merlot grapes per litre of Druif. A few years ago, we started working with the most progressive low-intervention winemakers around Europe. Claus Preisinger is renowned for his innovative approach in his vineyard, involving natural and regenerative farming. His Weingut is located in Burgenland, Austria. "

Season 2022-2023, Assemblage #41. Bottled on 02/02/2023."For this Aardbei, we shortly macerated local hand-picked strawberries and let the fruit lambik sit for an additional five monts on an oak barrels, before blending and bottling. We primarily used one-year and two-year old lambikken. The weighted average age still is more than 18 months. The final fruit intensity is 376 grams of strawberries per litre of Aardbei. 100% 3 Fonteinen. Bottle count: 714."

The lambikken used were one-, two-, three- and four-year old. This renders the weighted average age up to more than twenty-six months. Lambikken were brewed by ourselves, as well as De Troch and Lindemans."

"Cette bière limitée est la bière mère de notre Oud Bruin. C'est un single cask, ce qui signifie que la bière n'est pas un assemblage de différents fûts, mais provient entièrement d'un seul fût. Contrairement à la classique, elle n'est pas non plus mélangée avec del a bière jeune. La Foederbier a mûri pendant 2 ans dans de grands fûts en bois de 40 ou 50 HL. "For the production of the Rose Flower Lambiek - Sparkling Infused, we added rose petals to a soft, foeder-aged Lambic and left them to macerate for about 4 weeks. After that, we bottled the beer so a secondary fermentation could take place. The result is a slightly pink Lambic, with bright floral notes and a sparkling mouthfeel. "
