This Norwegian sour was brewed with locally foraged juniper and fermented with Kveik yeast, then aged in a Foeder for 18 months with our house mix culture. "Lervig and Slowboat have gotten their minds in sync to create a modern era Juicy IPA brewed with true Kveik yeast from Ebbegarden farm in Stordal Norway. The yeast is a perfect IPA strain due to its fruity tropical flavor it imparts as it ferments at high temperatures. We used generous amounts of Citra, Mouteka and Simcoe hops to allow the yeast to pair with each other. The beer itself is juuuicey 8,2% abv with haze and soft supple mouthfeel and balance. Tastes like a pineapple starburst, Pavlova and a Bellini cocktail all in one sip."

"En mars 2023, Joël a brassé et ensemencé 20hl de mout de pils classique à la brasserie de la Mule. Nous l'avons transféré dans un foudre équipé d'un système de refroidissement afin d'assurer une véritable fermentation basse. En septembre 2023, nous avons participé à la récolte des Houblons de Bruxelles, et houblonné à froid notre pils avec des houblons 100% ruxellois. Début 2024, après 10 mois de fermentation et de maturation en foudre, nous l'avons mis en bouteilles et en futs. Après 2 mois de refermentation naturelle, cette bière est désormais enfin disponible à la dégustation. Le goût est marqué par les esters de levure de lager, les arômes végétaux du houblon frais, et bien entendu les notes sauvages du foudre."

"For the production of the Rose Flower Lambiek - Sparkling Infused, we added rose petals to a soft, foeder-aged Lambic and left them to macerate for about 4 weeks. After that, we bottled the beer so a secondary fermentation could take place. The result is a slightly pink Lambic, with bright floral notes and a sparkling mouthfeel. "

Season 2021-2022 Assemblage #125. Bottled on 06/10/2022 "For this Oude Geuze, we blended six different lambikken originating from five different barrels. The lambikken used were one-, two-, three- and four-year old. This renders the weighted average age up to more than twenty-six months. Lambikken were brewed by ourselves, as well as De Troch and Lindemans."

"We blended 1 and 2 year old lambic and macerated them on fresh mirabelle plums from Belgian soil. After 6 months, we removed them and barrel aged the lambic for another 3 months. At botteling we blended this barrel with a 3 year old pink rose lambic."
