Blend of 1, 2, 3 and 5 YO lambics from Brouwerij De Troch and Brouwerij Eylenbosch aged on Highland Whisky barrels. Limited edition of 340 liters.

Season 2021-2022, Assemblage #51. Bottled on 17/03/2022. "For this Kweepeer, we macerated quinces from different organic fields around Flanders. We put them for almost four months on young lambik and blended with some more jonge lambik before bottling. It is hard to put a correct fruit intensity level as the massive quinces give off their flavours and aromas but do not really get disintegrated into the lambik. We did macerate 50/50 quince and lambik. So quite intense nonetheless."

Season 2018-2019. Assemblage #36 bottled on 28/01/2019. "This specific Cuvée Armand & Gaston was assembled with lambics from 8 different barrels that originate from 8 different brews. The average age of this blend at bottling was 18 months = 55% young + 30% semi-old + 15% old lambic."

"Blend of lambic macerated with organic cherries and cider. The fruit is blended with lambic then macerated for months. After this, the lambic matures further on barrel. The final blend with cider is done just before bottling."

Season 2022-2023 Assemblage #86. Bottled on 11/07/2023. "For this Oude Kirsebær, we macerated stevnsbær from the Frederiksdal Estate in Harpelunde, Denmark, on two-year old lambik. Maceration took over four months. We then blended with three- and a large portion of more-than-five-year-old lambik. The weighted average age of this sour cherry lambik clocks at more than 30 months on the moment of bottling. This blend consists of eleven different brews from 3 Fonteinen, Lindemans and De Troch. Of the 3 Fonteinen brews, about 90% of the grains were sourced in our own Cereal Collective."
