Season 2021-2022 Assemblage #22. Bottled on 25/01/2022. "For this Druif, we macerated Spätburgunder (the German Pinot Noir) from Weingut Harth + Harth. Freshly picked in Rheinhessen. Maceration took almost four months. We only used two-and three-year old lambics, which brings the weighted average maceration upon bottling to almost 21 months. The final fruit intensity clocks at 500 grams of grapes per litre of finished Druif. Thank you Henning & family!"

"Beer of spontaneous fermentation, the Old Pinot Meunier Tilquin is made from the fermentation of 250 g of grapes by liter of lambic. The grapes were grown biodynamically by our neighbours at Domaine W. Unfiltered and unpasteurized, this beer is refermented in the bottle."

Blend of 1, 2, 3, 4, 5 and 6 YO lambics from Brouwerij Sako, Brouwerij Den Herberg and Brouwerij Eylenbosch aged in an ex-Bourbon barrel used to age Maple Syrup with Sea buckthorn. Limited to 86 liters.

Season 2024-2025 Assemblage #12. Bottled on 04/03/2025. "For this Zenne y Frontera, we blended all of our Gutiérrez Colosía barrels. This family bodega at the port of Santa Maria in the province of Cádiz, provided us with some of the finest barrels, of which one was a very outspoken Manzanilla barrel. This blend consists of lambik aged on five distinct sherry barrels. We matured very old lambic for another thirteen months on these barrels. Consequently, the weighted average age of this blend is over 60 months."
