3 Fonteinen Druif Cuvée...
28,71 €Season 2023-2024 Assemblage #36. Bottled on 12/03/2024. "For this small batch of Druif, we had the honour to work with the renowned Jean-Pierre Robinot. For this field blend, we macerated destemmed grapes for six months on jonge lambik in a wooden barrel. The grapes underwent a short cold maceration just before. We used both Pinot D’Aunis (85%) and Chenin Blanc (15%) grapes (because JP said so), both typical to the Loire region. Afterwards, we blended with some two-year old lambik, rendering the weighted average age upon bottling to over 15 months. The final fruit intensity 323 grams of grapes per litre of Druif. All grains used in the nine different lambikken were all sourced from Pajottenland."

7,59 €Season 2023-2024 Assemblage #68. bottled on 26/09/2024. "For this Oude Geuze, we blended lambikken from three different brewers, six different brews and four different barrels. The ages the lambikken that we used for this blend range from young to more than four year old, accounting for almost 40% of the blend. The weighted average age of this blend at bottling is more than 28 months. Half of the lambikken were brewed by us and were fully crafted with local Pajottenland cereals. "

19,79 €Season 2022-2023 Assemblage #86. Bottled on 11/07/2023. "For this Oude Kirsebær, we macerated stevnsbær from the Frederiksdal Estate in Harpelunde, Denmark, on two-year old lambik. Maceration took over four months. We then blended with three- and a large portion of more-than-five-year-old lambik. The weighted average age of this sour cherry lambik clocks at more than 30 months on the moment of bottling. This blend consists of eleven different brews from 3 Fonteinen, Lindemans and De Troch. Of the 3 Fonteinen brews, about 90% of the grains were sourced in our own Cereal Collective."

Pellicle Vergistingen Mira...
35,25 €"A lambic blend containing 1, 2 and 3 year old lambic from 5 different breweries. On our search for the best fruit, we went to the Elzas region for fully ripe mirabelle plums. The region of Lorraine is famous for it, which is why we decided to buy handpicked biologically grown fruit from there. After a semi-carbonic maceration of 2 months, we added the 1 to 3 year old lambic to the fruit. After refermentation was done, we took the mirabelle lambic, backblended with some more young lambic and bottle the final blend pure without any additions."

This blend contains 50% of our favorite apple variety: Pomme d'Or, giving backbone and astringency to final result. The other 50% contains 50% of cider aged in old Calvados barrels and 50% cider aged in old Marsala barrels. The latter two ciders add complex vinous notes, while also giving the balance this cider deserves. Who chose to make this cider slightly sparkling, to fully highlight its layers.") and Spiced Fenugreek ("A lambic blend containing 1, 2 and 3 year old lambic from 4 different breweries. During our holiday last year in the south of France, we took home some of the best apricots and peaches we ever came across. After macerating them on the different lambics, we aged the beer for a couple more months. A few days prior to botteling we added fenugreek herb to it. This herb imparts a specific herbal and curry-like character. Interestingly, fenugreek powder can be used to fight mildew in the vineyard.")
