"Appel - Blauwe Bes Geuze Light Peated Edition is a blend of 1, 2, 3, 4, 5 and 6 year old traditional lambic from the Zennevalei from Brouwerij Eylenbosch, Brouwerij Sako and Brouwerij De Herberg with a maceration of Appel - Blauwe Bes on the lambic's. Also 20% is peated lambic"

Blend of lambics 1,2,3, 4, 5 & 6 YO lambics from Brouwerij Eylenbosch, Brouwerij Sako, Brouwerij Den Herberg and Brouwerij De Troch macerated with grapes (80% Regent & 20% Cabernet Cortis). Limited to 417 liters.

"Cider macerated with Pinot Noir pomace. Spontaneously fermented & barrel aged. The grapes were pressed, the pomace was macerated on cider from season 2022. The grape juice was co fermented & barrel aged with apple juice from season 2023 and released a few months later. In collaboration with Lovulum, Illegaal, Domaine Montaillant for Restaurant Savage in Brussels. Part of the 'Flat Tire Series'. Wine from Pinot Noir by Domaine Montaillant, Beer with Pinot Noir by Illegaal, Cider with Pinot Noir by De Mederie & Lovulum."

"Paragon is one of if not our most cherished products. We take this one step further by a process of selecting aside the best barrels of the 100’s of them aging in our rackhouse. We spend the time to sample each barrel and judge the quality, a consensus between the barrel managers and brewers is made and these barrels are set aside while we seperate Paragon barrels. This years version is noted a nice balance of sweet and alcohol, with all the characteristics of slight dark chocolate, roasted vanilla, dried fruits, Toffee, and bourbony oak."

"Imperial version of our Traditional Mild aged in Bourbon barrels for 12 months. The historical English ale is brewed with huge amount of Mild, Pale Chocolate, Crystal, chocolate malts and fermented with our favorite WY yeasts. Aroma and taste are rich, with milk chocolate, toffee and bread. Barrel gives notes of vanilla, toasted oak and alcohol."

"A collab we did with our friends from Dieu du Ciel brewery in Montreal, Quebec. Brussels and Quebec share plenty of things, including our fantastic array of swear words. 'Crisse!' is one of the iconic curses from La Belle Province, and we thought it deserved its own beer... Our friends insisted on calling it a 'Triple du Nouveau Monde.' Indeed, it's a fairly robust blonde (7.5%), packed with a good dose of spelt and fermented with our in-house yeast for that Belgian twist. However, it's heavily hopped with North American hops (from the USA to be precise), carefully chosen by J-F, who is the master brewer of DDC. The result is a super aromatic beer, bursting with exotic fruits like pink grapefruit, passion fruit, starfruit, prickly pear, and yuzu. This fruity explosion is complemented by complex floral notes and backed by a slightly resinous touch. Its bitterness is subtle but present (we make beer, not fruit juice!), balanced by a nice, soft body, with a low CO2 saturation to up its drinkability. A beer that brings a bit of summer to the heart of this gloomy winter and that will warm you up pleasantly!"

Double Mash Balsamic Sour. Blend of Marsala, Vermouth & Banyuls Barrel aged

"Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime."
