Russian Imperial Stout

Russian Imperial Stout aged fir 14 months in Porto Barrels.

"At the end of November we welcomed La Pirata Brewing to Galway for the long awaited return leg of our collaboration. This triple mashed Imperial Stout spent three months in steel before being infused with thoughtful amounts of Madagascan Vanilla beans & tonka beans. The bean treatments have added layers of decadent milk chocolate & vanilla to what was already a luscious imperial stout.." BB is March 2023 (Canned March 2022)

Strong Amber beer aged for several years in oak barrels.

"Prato Alto is our most complex wine. It features extended maceration and an horizon of long term. Grapes: GARGANEGA, INCROCIO MANZONI, BRONNER. Grown on calcareous soils: sand, clay and silt. Spontaneous fermentation in acacia wood vessels of 1400 liters , without sulphur addition. Maceration on the skins for 7 days, with delicate fulling."

The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age."

Classic Aupa Tovarisch aged for 24 months in Armagnac barrels

Onyx (mperial Stout brewed with cacao, vanilla and orange peel) aged 9 months in Heaven Hill bourbon barrels.

Natural wine made w. Ull de Lebre, Sumoll & Parellada grapes.

"Imperial Christmas Stout brewed with maple syrup. Aged in a blend of Bourbon barrels for 19 months, then conditioned on organic peruvian toasted and raw cocoa nibs and a soft touch of Cassia cinnamon sticks."

Gamay 2021. Naturally feremnted withour any additions. Carbonic maceration for 8 days and aged for 8 months in wooden barrels and foeders.

Vintage hand crafted apple sparkling wine from fresh farm pressed traditional Estonian juice apples. Wild yeast used for primary fermentation. Bottle fermented for at least six months according to traditional method.

"Made in deep winter by freezing the apple juice before fermentation starts. This concentrates the rich, intense flavours and reflects the sweet and tart character of late ripening Estonian apple varieties." Fermented with wild yeats and matured in oak barrels.
