Born of mixed fermentation and aged with the patience of old innkeepers, Phi was laid to rest in barrels of Wild Turkey Bourbon and Tawny Port, where time wove its magic. The sourness sings like a fiddler at dusk, lively and bright, while the barrel's kiss adds depth, warmth, and echoes of distant lands. Thus, the beer took on a name worthy of song: The Green Dragon Inn - a drink to rouse the heart, loosen the tongue, and remind all who sip it of home, hearth, and the road that ever goes on."

Fellowship 2024 Ale No 3. "In the cellars where silence reigns and the stone walls remember songs long forgotten, a noble brew was laid to rest. Theo, as it was once called, found slumber in a barrel of Margaux red wine-oak steeped in the blood of vineyards from lands far beyond the sea. For two years it dreamt beneath the earth, drawing wisdom from the wood, strength from the wine, and spirit from the stillness. When it awoke, it was no longer Theo. It had become Theodén - a kingly name, bold and grave, bearing the weight of time and the richness of its lineage. A beer for those who would drink with honor, and remember."

Fellowship 2024 Ale No 4. "Far across the sundering seas, in the West beyond the reach of mortal sails, lies Tol Eressëa - the Lonely Isle, shrouded in song and mist. It is from this legend that a brew takes its name. For three long years, it slumbered in barrels that once cradled the deep, fortified wines of Madeira - an island whispered of in old tongues, distant yet resonant with warmth and wonder. The wood, kissed by salt and sun, gave freely of its memory. Thus was born Tol Eressëa, a beer touched by the echo of elven shores - gentle, deep, and radiant with the light of the West. Not merely a drink, but a remembrance of things unseen and far away."

"Lambic beer is a very versatile beer inspiring creativity. The Family Brewery Lindemans proves this once again with the launch of the BlossomGueuze, an old gueuze with a twist. The result? A very original and unique beer, made with elderflower. Perfect for food pairing or as a tasty aperitif! BlossomGueuze is 2 to 3 year old lambic aged in wood, blended with 12 month old lambic and elderflower. After refermentation in the bottle this gueuze has a golden colour and combines the sour taste of lambic with the natural and fresh aromas of elderflower." Best Before Date is 2021. Season 2023-2024 Assemblage #30. Bottled on 16/02/2024. "For this organic Druif, we blended three different grape lambikken, based on three typical grapes of the Languedoc: Carignan (20%), Grenache Noir (40%) and Syrah (40%). All grapes were picked at Domaine La Baronne. André and Suzette Lignères aim is to create intense yet balanced wines, safeguarding the biodiversity in their vineyards through low yields and biodynamic treatment of their vines. We applied a cold maceration on both the Carignan and Grenache grapes before continuing maceration on young lambik for a period of more than five months. All macerations happened on oak barrels. We blended with three-year old lambik, clocking the weighted average age of this grape lambik to more than 23 months. The final fruit proportion of the blend is 352 grams of grapes per litre of Druif. All grains of the 16 brews were sourced within our cereal collective and are all organic. 100% 3 Fonteinen."

Season 2023-2024 Assemblage #37. Bottled on 09/04/2024. Bottle Count 1824. "For this Druif, we macerated organic Roussanne grapes from Domaine La Baronne. This winery is situated in Corbières in Languedoc, in between Carcassonne and Narbonne. André and Suzette Lignères aim is to create intense yet balanced wines, safeguarding the biodiversity in their vineyards through low yields and biodynamic treatment of their vines. We macerated the full Roussanne grapes for more than eight months in an oak barrel. We then blended with some more four-year old lambik. The four-year old proportion makes up more than 60% of this fine grape lambik blend. The weighted average age upon bottling is therefore more than 31 months. The final fruit proportion is 307 grams of grapes per litre of Druif. 100% 3 Fonteinen."

In 2022 we tasted a small beautiful plum from Spain, the parfume and taste was heaven on earth.
